A chocolate mousse pudding that’s a cross between a dessert … and a tasty shot. This boozy RumChata chcolate pudding is a surprisingly easy, yet decadent dessert that’s perfect for your next girl’s night gathering … or fancy adult dinner party.
One night I was scrolling through my facebook feed, checking what my friends were up to, when I ran across this Boozy Chocolate Pudding post from one of my work friends asking who would make this for her. I couldn’t say no. I mean, how can you go wrong with Boozy Chocolate Pudding? Especially when it’s got RumChata and Godiva Chocolate liqueur in it.
To freeze or not to freeze?
Once I’d made the pudding and spooned it into the fancy little martini glasses for photographing, I couldn’t wait the extra couple hours to wait for it to freeze! I devoured one of those pretty little puddings on the spot. Oh man that was good. How could it possibly be better frozen?
But to be true to the recipe, I put the rest of the pudding into little jars and stuck them in the freezer overnight. I tried it this morning and … Oh. My. Gosh. It really IS better frozen! Super creamy, dreamy and boozy. Like one of the most decadent “ice creams” you’ve ever tasted.
If you are a chocolate lover … and if you love RumChata, you seriously HAVE to make this pudding!

- Yield: 4 - 6 servings 1x
Ingredients
- 1 cup heavy whipping cream
- 1 Tablespoon cornstarch
- 1 teaspoon real vanilla extract
- 1/4 cup powdered sugar
- 1/2 cup Rumchata (rum cream liqueur)
- 1/4 cup Godiva chocolate liqueur
- 3/4 cup milk
- 1 box instant chocolate pudding mix
For the top: additional whipped cream & chocolate shavings or mini chocolate chips
Instructions
- Using a hand mixer, whip the whipping cream until soft peaks form, then sprinkle with cornstarch, vanilla and and powdered sugar and whip just until stiff, using a spatula to wipe the sides back into the cream. (The cornstarch stabilizes the whipped cream.)
- In a separate bowl, add the liqueuers, milk and pudding mix. Use the hand mixer to beat until mixed well and no little bumps of pudding mix remain. The pudding will start to thicken.
- Fold the whipped cream into the pudding mixture. If enjoying right away, spoon into dessert glasses and top with more whipped cream and chocolate shavings or mini chocolate chips. Or you can chill for later by spooning the pudding mixture into half-pint jars, covering and refrigerating or freezing.
Notes
To make this recipe gluten free, substitute a gluten free liqueur for the Godiva liqueur and make sure to use a gluten free pudding mix. (I checked and as of this date (Feb 2018), Jello brand pudding mixes are gluten free.)
