Eggplant Caprese Pizza ~ a delicious low carb pizza that is loaded with caprese flavor!

Melty cheese, fresh sweet tomatoes, fresh basil over a roasted eggplant steak slathered with pizza sauce, this eggplant caprese pizza is delicious and low in carbs, and indicentally, yeah, it’s gluten free. Drizzle with a little balsamic reduction if you like.


I had a big, beautiful eggplant from my mom’s garden, some lovely garden tomatoes and not much time to cook. I wanted something delicious. I had this idea for eggplant pizza, using the eggplant for the crust. I’ve done that before with zucchini and it was yummy, so why not do it with eggplant.

I wanted a caprese topping to showcase my tomatoes so I searched for eggplant caprese pizza on Google and up popped lots of photos of my vision. How easy was that?

I cut my eggplant into thick steaks and roasted them, slathered them with pizza sauce and topped with cheese and tomatoes and baked it. Super easy!

You guys, this eggplant pizza tasted phenomenal! Not like “real” pizza with a wheat-based crust and especially if you have a big eggplant like mine, you’re probably going to want to use a fork to eat it. But still totally delish. And skinny and healthy and beautiful! Look at those gorgeous colors.

Eggplant Caprese Pizza (flourless, low carb)

  • Prep Time: 5 minutes
  • Cook Time: 35 minutes
  • Total Time: 40 minutes
  • Yield: as many as you like

Ingredients

Scale
  • 1 globe or rosa bianca eggplant
  • Pizza sauce
  • Slices of provolone or mozzarella
  • 23 fresh garden tomatoes
  • For the top: Fresh basil leaves, olive oil &/or balsamic reduction

Instructions

  1. Cut eggplant into slices 3/4 inch thick. Bake at 425 for 15 – 20 minutes or until the eggplant is tender.
  2. Spread each eggplant slice with pizza sauce. Top with a slice of provolone or mozzarella cheese to cover the sauce, then add sliced tomatoes and a bit of shredded mozzarella on top.
  3. Bake at 425 F. for about 10 – 15 minutes or until the cheese is melted and a little browned on the edges. Chop fresh basil into slices and sprinkle over the pizza, then, if desired, drizzle with a little olive oil or balsamic vinegar reduction. Garnish with more basil leaves. Enjoy!

Notes

To make the balsamic reduction: just pour a bunch of balsamic vinegar into a small saucepan, bring to a boil, then reduce heat to a simmer and cook until reduced to about half.
