Peanut Butter Chocolate Oat Bran Cereal ~ Hot breakfast cereal with great peanut butter flavor and pockets of melted chocolate!

Ready in just 5 minutes, this hot breakfast cereal is loaded with great peanut butter flavor and pockets of melted chocolate. Eating healthy never tasted SO good!


The whole bowl has less than 300 calories, over 16 g of protein, over 14 g of fiber (if you include the fiber powder) and a good bit of calcium and iron as well. It’s super satisfying and keeps you full for hours.

What is oat bran?

Oats are widely regarded as one of the healthiest grains you can eat, as they’re packed with many important vitamins, minerals, and fiber. Oat bran is the outer portion of the oat, just beneath the inedible hull. In general, the outer bits of the grain/vegetable are the parts with the most nutrition, and oat bran is a shining example. I discovered oat bran a little while ago on my quest to lower my cholesterol and oh man, am I in love with this stuff! It has over double the amount of fiber that you find in oatmeal, it works great in place of oatmeal or flour in recipes, but I think the best thing about it is it makes a delicious breakfast cereal in the microwave in just a couple minutes. The cereal is soft, warm and comforting, reminiscent of cream of wheat, but with the great taste of oats. You can find oat bran in the bulk section of your supermarket or in the health food section. If you have trouble finding oat bran in your local store, you can always buy it online.

The other “secret” ingredient in this recipe is peanut butter powder. Peanut butter powder (a.k.a. peanut flour) is simply peanut butter with the fat removed, so you’re left with all the delicious flavor, fiber and protein from eating peanut butter, but without the excessive calories. I used PBFit, but you can substitute PB2 or Jif or whatever peanut butter powder suits your fancy. I’m more than a little smitten with it. I bought a gargantuan jar of it at Costco about a month ago and I’ve already used up the entire thing. I thought it would take me ages to get through it, but nope. I’ve eaten almost the entire jar by myself. It’s seriously wonderful! (And yeah, okay, I might be a bit of a peanut butter freak.)

The most ah-mazing thing about eating this bowl of hot oat cereal is that it tastes really good and peanut-buttery, and then you dive into it and find one of the melted chocolate chips! Swoon. How often do you get to eat melted chocolate with peanut butter for breakfast AND count it as healthy?

I have to admit: this cereal isn’t all that amazing to look at initially … it’s mostly kinda brown and peanut butter-ish looking with hints of chocolate.

And then BAM that melted chocolate hits your taste buds and well, the rest is history because you’ll be in love with breakfast. Well I was, anyway. I can’t even tell you how often this has become my go-to breakfast bowl lately when I need something quick, filling, and full of protein and fiber.

I want to make sure I’m getting enough fiber in my diet every day, for my heart and my cholesterol. (It’s great for digestive health too.) At my age, that’s 21 g of fiber, which seems like a lot (to me), but not after you have THIS for breakfast! Then I’ve got only 7 g more to go, which is pretty dang easy to do.

Having this for breakfast, maybe a light salad for lunch and some meat or fish and veggies for dinner makes a delightful, taste-bud-dancing, nutritionally balanced day. My goal is to make all of my days this delicious (while “magically” reducing my cholesterol)!

Peanut Butter Chocolate Oat Bran Cereal

  • Prep Time: 2 minutes
  • Cook Time: 3 minutes
  • Total Time: 5 minutes
  • Yield: 1 serving 1x

Ingredients

Scale
  • 1/3 cup oat bran
  • 1/2 cup coconut milk (or milk of choice)
  • 1/2 cup water
  • 2 Tablespoons peanut butter powder (PB2 or PBfit)
  • 2 teaspoons fiber powder (dextrin, optional)
  • 1/41/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla
  • Pinch of salt
  • 34 packets of stevia (or other sweetener of choice, to taste)
  • 1016 good quality dark chocolate chips

Instructions

  1. Mix together all ingredients except the stevia and chocolate chips in a fairly large serving bowl. The peanut butter powder might not want to dissolve, but that’s okay, it’ll dissolve once you heat the cereal.
  2. Microwave on high for 2 – 2 1/2 minutes, stopping to stir after 1 minute, until the cereal is not soupy when stirred. Stir in a little more milk or water if it’s too thick.
  3. Taste and add sweetener as desired. Briefly stir in the chocolate chips and let sit just a tad to let the chips melt. Dig in and enjoy!

I haven’t tried freezing my cheesy crab mushrooms, but it should work!
