You guys, I have the most amazing breakfast recipe for you … and it’s so fast and easy, you can make it at work! I’ve been doing exactly that for several days a week for the past two weeks. Perhaps I have a small obsession with cherries, but I never seem to tire of it. It’s just so yummy!
There is a small prerequisite, though–you have to make the Cherry Vanilla Rum Sauce first. This is why I’m bringing you this recipe on a weekend so you have pleeeenty of time to get that cherry sauce cooked up. Now, I know some of you might freak out a little bit about putting rum in your oatmeal. Seriously, most of the rum cooks off when you’re cooking your sauce … and you’re not using that much of the sauce in your oatmeal anyway. It’s no worse than using a bit of vanilla extract in your oatmeal and it adds so much flavor!
I keep a little jar of quick-cooking oats, a 1/4 cup measuring cup and a small shaker of salt in my desk for oatmeal mornings. Then all I have to do is flavor it up. The only trick to this recipe is not boiling over the oatmeal. Microwaved oatmeal can do that to you sometimes. This is why I recommend using a BIG bowl. The oatmeal is going to puff up quite a bit when cooking. Please don’t do like I did and insist on using a mug to cook your oatmeal and then make a huge mess in the company microwave so then you have to spend another 5 minutes cleaning up after yourself. I am not going to mention how many tries it took me to learn my lesson.

- Prep Time: 3 minutes
- Cook Time: 2 minutes
- Total Time: 5 minutes
- Yield: 1 serving 1x
Ingredients
- 1/4 cup quick-cooking oats
- 1/4 cup water
- 1/4 cup milk
- A dash of salt
- About 1/4 cup Cherry Vanilla Rum Sauce (recipe here)
- 1 – 2 Tablespoons chopped toasted walnuts
Instructions
- Put the oats, water, milk and salt in a large bowl and stir. Microwave on high for 1 minute. Stir. Microwave another minute. Stir.
- Is the oatmeal done? If so, stir in the cherry sauce. If not, microwave another 30 seconds before stirring in the cherries.
- Sprinkle the top with toasted walnuts and enjoy!
