Chicken salad with a kick! Stirring in some buffalo chicken sauce give this crunchy chicken salad that buffalo hot wings taste, without all the fat and extra calories. A bit of celery and carrot add the crunch factor. For extra protein and fiber, this recipe uses hummus in place of some of the mayonnaise (thus the “chickpea” in the name). It’s a salad that’s full of vibrant flavor, colors, crunch and protein.


I had some leftover chicken in my fridge I needed to use up. I wasn’t sure how well hummus would work for a chicken salad “binder”, but I thought it was a fun idea that I was just dying to try. It works beautifully. You could probably get away with all hummus/no mayo if you so desire (because let’s face it: hummus is just super YUMMY!)

I used 4 Tablespoons of the buffalo sauce and it had a nice little kick, but I still really wouldn’t call it “hot”. However, my friends tell me I have a skewed idea of what “hot” is, so adjust the amount of hot sauce to your tastes. And if it’s still not hot enough for you, drizzle some more sauce on top.

Buffalo Chicken Chickpea Salad

  • Prep Time: 15 minutes
  • Total Time: 15 minutes
  • Yield: 2 - 4 salads 1x

Ingredients

Scale
  • 1 large rib of celery, chopped
  • 1/4 cup peeled, chopped carrots
  • 1/4 cup chopped green onion tops
  • 1/2 cup Sriracha hummus (recipe here … or use whatever hummus you have on hand)
  • 1/4 cup light mayonnaise (or sub plain Greek yogurt)
  • 1 1/41 1/2 cups chopped, cooked chicken breast
  • 24 Tablespoons Frank’s Buffalo Hot Wings sauce
  • For the salad: Mixed greens, roasted sunflower seeds, blue cheese crumbles

Instructions

  1. Chop up the celery, carrots, and green onion tops and put them in a medium mixing bowl. Add the hummus, mayo, chicken and buffalo wing sauce and stir to mix.
  2. Make a bed of greens, add the chicken salad and top with sunflower seeds and blue cheese crumbles. I didn’t think it needed any dressing, but if you feel like it does, try drizzling on some blue cheese or ranch and maybe a bit more buffalo sauce if you want your salad hot n spicy.
