This is a super simple way to make perfectly crispy and perfectly seasoned oven fries. I could eat nothing but these for days … I kind of did, having them for dinner one night and then breakfast the next and I’m still wanting to go make them again tonight. I even caught myself dreaming about them last night …
I was driving my daughter to the city to attend a con … it’s one of those fascinating events that she delights in, a place where people feel free to dress and act like characters they love to read about. She loves this game of storytelling and pretending. It suits her.
On our 4-hour drive to the con, she got hungry, like teenagers do, and wanted to stop at Subway. This always seems strange to me because she always hated Subway when she was little … but now that’s where she always wants to go now. While she was ordering at the Subway, at the top of the shelf of chips, was an interesting selection of flavors. One of them, in particular, called to me … Tzatziki potato chips. I picked it up and held it in my hands and considered it …
… and then I set it back down. And she said to me, “if you want it, why don’t you get it, Mom?” … in the way that she does, her sweet way of reminding me to take care of myself. I said to her, “because it will make my body feel yucky … what I will do instead is to make some Greek potato wedges and some Tzatziki sauce and they will taste wonderful together and my body will be much happier with me.” And she nodded and smiled, since she is well aware of her mother’s eccentricities.
I was staying at my sister’s house while my girl was at her con, but my sister and her family were off at my parent’s house, so I had the place to myself, a strange quietness in a household that is normally so loud. I looked around for any sign of a potato … but I couldn’t find any, so I found an Aldi nearby and bought a bag of golden potatoes and some Greek yogurt to make the Tzatziki. I looked to the internet to tell me how to make Greek potatoes, and couldn’t find a recipe that pleased me (and besides, I neglected to get any lemon while I was out …) so I decided to make my own version. In the process, I discovered a seasoning on my sister’s shelf that intrigued me … Trader Joe’s 21 Seasoning Salute.
I sprinkled it liberally all over my potatoes, and oh man, was it good! I gobbled down one fry, then another, then another … and woke again in the morning wanting to make them all over again. I decided I had to go to Trader Joe’s and get some of this magical seasoning.
Oh, and after going through the trouble of buying Greek yogurt, I skipped the Tzatziki because my sis doesn’t have fresh mint … and Tzatziki without fresh mint, well, it just wasn’t worth troubling over.
If you don’t have a Trader Joe’s about, I think whatever seasoning mix that delights you would work well (maybe Mrs. Dash?) … Regardless of the seasonings you use, the fries will be perfectly crisp on the outside and tender on the inside, just as a good steak fry should be, but without the deep fat frying. You can easily multiply this recipe to serve a crowd … just allow 1 Tablespoon of oil per large potato.

- Prep Time: 10 minutes
- Cook Time: 1 hour
- Total Time: 1 hour 10 minutes
- Yield: 2 - 3 servings 1x
Ingredients
- 1 – 2 yellow or russet potatoes
- 1 – 2 Tablespoons avocado or olive oil
- Trader Joe’s 21 Seasoning Salute (or your favorite seasoning blend)
- Salt & freshly ground pepper
Instructions
- Preheat the oven to 400 F.
- Cut the potatoes into 8 wedges apiece. In a bowl toss them with the oil, making sure that each wedge gets fully coated with oil.
- Place the wedges on a baking sheet, cut side down and sprinkle them with seasoning, salt & pepper. Flip them over and season the other side.
- Bake at 400 for about 40 minutes or until they are starting to get crispy around the edges. Flip them over and bake for another 15 – 20 minutes or until they’re crispy on both sides. Serve hot.
