Light Homemade Thousand Island Salad Dressing ~ Sumptuous Spoonfuls #thousandisland #dressing #recipe

Lighter, healthier and yes, tastier too! An easy homemade thousand island dressing that you can quickly whip up with ingredients you probably have in your pantry or fridge right now.  Ditch the store-bought stuff and make it yourself in 5 minutes. You’ll be glad you did.

I promised you guys I would have a thousand island dressing recipe to go with those Reuben Bites I posted. I’m not delaying … here it is! It’s made with yogurt and light mayo in place of the high fat mayo, so you can feel good about using this for dipping, spreading on sandwiches or burgers or dressing your salads, but it’s also bursting with flavor. Make it just like this … it’s marvelous. You can even use homemade ketchup in place of store-bought if you want. Kick it up a notch by adding extra Sriracha. Use more or less garlic or onion … or use your own favorite pickles! Adjust the seasonings. Make it your own.

Just don’t leave out the smoked paprika. That stuff is magical for good smoky flavor!

PS. I lightened this up a bit more by using nonfat Greek yogurt.and I used only 1 T of sweet relish I also thinned it down with some fresh lemon juice. Still delish!
