PB2 Protein Pancakes


Light and fluffy peanut butter pancakes with a healthy twist, drizzled with a totally addictive peanut butter maple syrup. What’s not to love about that? Especially when they are gluten free, heart healthy, high in both fiber and protein!

After making my peanut butter chocolate fiber bars, it occurred to me that they might be higher in fiber and lower in calories if I used peanut butter powder in place of peanut butter. Since I was all out of PB2, I picked up some PBfit at Costco. It looked like about the same stuff … and indeed it has a nice peanut-y smell and flavor.

Anyway, that left me with a gargantuan jar of peanut butter powder, so I went searching for recipes to use it. And I stumbled across a collection of 21 peanut flour recipes from Greatist that really piqued my interest. I wanted to try SO many recipes in that collection!

These peanut butter pancakes from Kim’s Cravings were the first on the list. And they looked SO good and fluffy … how could I NOT try them? I used to adore pancakes … when I was a kid, I would eat 6 pancakes every time dad made them. But once I realized pancakes are typically not so good on the waistline, I quit eating them. (However, the child inside of me still yearns for pancakes!)

So I was super excited about THESE pancakes … they looked so good in the pictures and the best part: these pancakes actually fit in my low cholesterol diet! With only 247 calories INCLUDING the amazing peanut butter maple syrup, 8.7 g of fiber and 16.7 g of protein per serving, yeah, I could totally eat these for breakfast (or hey, for dinner!) and still feel good about it. Wow. Just wow. I couldn’t wait to try them.

As soon as I had my first test pancake out of the pan, I was munching away. Very good. I thought they needed just a bit more fluffiness, so I added a little more baking powder and continued my pancake flipping. While the cakes were cooking, I whisked together the peanut butter maple syrup. One taste and I was IN LOVE. I could drink this stuff! (But I probably shouldn’t …)

Anyway, I meant to eat only half the batch, but ended up eating more like 3/4 of it in one sitting, all by myself. I put fresh blueberries on top and really loved the blueberries with the pancakes, but next time I’m totally putting blueberries IN the batter! I think that would be marvelous. Bits of banana would also be good … or I might just go all decadent and add dark chocolate chips instead … THAT would be heaven, wouldn’t it?

(Perhaps I should have called these PBfit pancakes, since I used PBfit, but either one–or your own favorite brand of peanut butter powder–would work just fine.)

PB2 Protein Pancakes

  • Prep Time: 10 minutes
  • Cook Time: 15 minutes
  • Total Time: 25 minutes
  • Yield: 1 - 2 servings 1x

Ingredients

For the pancakes:

  • 2 eggs
  • 1 medium banana
  • 2.5 Tablespoons PB2 or other peanut butter powder
  • 1 Tablespoon coconut flour
  • 1 Tablespoon oat bran
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon vanilla extract
  • 1/81/4 teaspoon salt

For the peanut butter maple syrup:

  • 1 Tablespoon peanut butter powder
  • 1 Tablespoon milk of choice (almond, soy or coconut milk work well)
  • 1 teaspoon real maple syrup
  • 1/4 teaspoon vanilla

Instructions

  1. Whirl all the ingredients together in a mini chopper until well blended. If any flour is stuck to the sides, scrape down the sides with a spatula, then whirl again to mix it all in.
  2. Heat a nonstick frying or omelet pan over medium low – medium heat. Pour 1/8 – 1/4 cup batter for each cake. Cover and let it cook until set and golden brown on bottom, then flip carefully and cook until the other side is golden brown. If the dough is too thin, add more oat bran. (My batter was thin because I used a frozen banana that was a little watery when I thawed it.)
  3. While the pancakes are cooking, whisk together the peanut butter maple syrup ingredients.
  4. When the pancakes are done, serve hot drizzled with the peanut butter maple syrup and enjoy!
