Debating whether to have an omelet or avocado toast for breakfast? Why not have both? Make a cheesy omelet, put it on toast with avocado, then top with fresh juicy sweet garden tomatoes and everything bagel seasoning. If you’re a fan of eggs, cheese, avocado and really good tomatoes, once you taste this, this easy breakfast will call to you time and time again.
This breakfast is SO good, I’ve been eating it several times a week for months now. Part of me wanted to blog it and part of me thought that it doesn’t even feel like a recipe, it’s so simple. I mean really, just 6 ingredients and one of them is TOAST? How can you count that as a recipe? Yet, when it’s done right, and the ingredients are all fresh and amazing, the combination of all of them together kind of blows me away every … single … time.
I really love my omelet avocado toast on Norwegian Crisp Bread … that bit of crunch on the bottom makes me SOOoooo happy, but you can use any type of (preferably whole grain) bread that you love for the toast. Toast it up to your liking, then slide that beautiful cheesy omelet on top then top with avocado, tomato and that addictive Everything Bagel seasoning and you’ve got yourself a bit of breakfast nirvana in a snap.
Seriously I’m drooling just thinking about it …
Is omelet avocado toast good for cholesterol?
Reserachers have recently discovered that, for most people, eating eggs does not significantly impact cholesterol levels in most people. A number of recent studies have confirmed that eating eggs as part of a healthy diet does not increase the risk of heart problems. In fact, the American Heart Association (AHA) published a scientific advisory in 2020 that concluded that healthy people could safely eat a whole egg daily. They also approved two eggs daily for healthy older adults because of the overall nutritional benefits and convenience of eggs.
Also, opt for free-range eggs if you can get them. Free-range eggs contain up to a third less cholesterol than conventional supermarket eggs. A standard egg contains an average of 423 milligrams of cholesterol, while free-range eggs contain an average of 277 milligrams. Plus farm fresh, free range eggs just TASTE better and they have such a beautiful intense yellow yolk. (I’m so lucky to have a friend who raises chickens!)
Putting your farm fresh egg on a fiber-rich, whole grain toast and topping it with avocado, which is listed as one of the top foods to help lower your cholesterol, plus heart-healthy tomatoes makes this breakfast not just something that makes your tummy and your taste buds happy, it also helps out your heart.
As for the cheese, you’re only consuming 1 oz. of cheese (per person) in this recipe, BUT if you’re using grass-fed cheese, it should (in theory) deliver the same benefits as grass-fed butter, which means you’re also delivering more good heart-healthy nutrition to your body even WITH the melty, wonderful cheese.

Ingredients
Per person:
- A bit of grass-fed butter (for oiling the pan)
- 1 egg
- 2 teaspoons water
- Red Robin Seasoning (or salt) & fresh-ground pepper
- 1 oz. good quality grass-fed cheese (I used Kerrygold Dubliner), sliced
- 2 pieces of Norwegian crisp bread (if you can’t find it, here’s my recipe … or use your favorite bread, toasted)
- 1/3 – 1/2 of an avocado
- 1 medium ripe, sweet tomato or 2 – 3 small tomatoes (or several cherry tomatoes), chopped in chunks
- Everything Bagel seasoning
Instructions
- Heat a small frying pan or omelet pan over medium heat. Rub butter over the bottom. While the pan is warming, in a small bowl, whisk together the egg & water. Once the butter begins to look nice and bubbly, pour the egg in and whirl the pan gently a bit so the egg coats the bottom of the pan.
- Break the cheese into chunks and spread down the center third of the egg. Sprinkle with Red Robin Seasoning (or salt) and fresh ground pepper. Cover and let cook for a few minutes until cheese is nice and melty.
- Once the egg begins to set, use a spatula to fold over the sides to make a long, skinny omelet. If the egg isn’t quite done yet, cover and cook just a bit longer.
- While the egg is cooking, toast your bread and also either smash your avocado or cut into chunks. If doing chunks, toss the avocado with the chopped tomato.
- Cut the omelet in two and using your spatula, carefully slide each half onto the toast. Either smear the smashed avocado over the omelet and then top with tomato, or spread the mixed avocado/tomato mixture over the omelet. Sprinkle with everything bagel seasoning and enjoy!
