When it’s hot outside and the last thing you want in the morning is a hot cup of coffee, try switching it up and make a chilly peanut butter coffee shake! This peanut butter coffee shake tastes like a sinful shake from the ice cream shop, but it’s really very healthy. Seriously, it’s packed with over 17 g of protein, 11 g of fiber, and loads of good nutrients like iron and potassium. It’s breakfast in a glass! Great for busy mornings when you have “no time for breakfast”.
If you’ve never tried peanut butter and coffee together, you are in for a treat. Especially if you’re a peanut butter lover! I first tried these two delights together in a peanut butter mocha from a local coffee shop. Oh my god. It was life-changing. Unfortunately, I’m very sensitive to caffeine and they don’t make a decaf option. I guess that is actually probably a good thing. Because I’m sure it’s not the healthiest thing to drink.
Peanut Butter Decadence without the Guilt
But THIS, though. I could drink one of these every day without feeling an ounce of guilt. In fact, I’ve had one of these babies two days in a row. The taste and texture are pure bliss. Because yes, I included a scoop of real vanilla ice cream. But to offset that, I used peanut butter powder, which is simply peanuts with all the fat removed. This allows PB powder to deliver loads of protein and fiber. AND delicious peanut butter flavor, without the high calories. I threw in a spoonful of real peanut butter for heart healthy fats and richness. And a frozen banana to make it extra creamy. (AND add potassium and fiber.)
The inspiration for this treat came from from one of my favorite smoothies: my chocolate peanut butter banana chia smoothie. (Or the more decadent version that we jokingly refer to as “muck” at my house.)
If you’re concerned that your shake will taste too much like banana, I have a little tip for you. Freeze the banana BEFORE it gets super brown. Obviously, the one in my picture is well past this stage! I froze the bananas for my shakes well before this stage. Freezing my bananas earlier BEFORE they get super ripe makes the banana flavor disappear in this yummy shake. Yet still provides that boost of creaminess you want in a shake.
On the other hand, if you want the extra sweetness and don’t mind the taste of banana, then wait to freeze your bananas until they are super dark and mushy.

Ingredients
- 1 frozen banana, broken into chunks
- About 1/2 cup chilled coffee
- 1.5 oz. (about 1/3 cup) vanilla ice cream or frozen yogurt
- 2 Tablespoons peanut butter powder (such as PB2 or PBFit)
- 1 Tablespoons creamy peanut butter
- Optional: 1 teaspoon unflavored fiber powder (such as Benefiber)
- Milk, as needed, to get desired consistency
Instructions
Blend all ingredients together in a smoothie cup blender until smooth and no chunks of banana remain. If more sweet is desired, blend in a bit of Stevia or maple syrup. Enjoy!
Notes
For a peanut butter MOCHA shake, you could add 1 – 2 Tablespoons cocoa powder and sweetener of choice, to taste. Or chocolate syrup.
