A new favorite for the holidays! Maple Cinnamon Candied Almonds

Maple Cinnamon Candied Almonds make the perfect snack food – or gift! – for the holidays. Crunchy with a light sugary crust, who could resist sweet candied nuts, especially when they’re scented with maple, cinnamon and vanilla? AND a simple roast in the oven is all you need to make them.

Easy Maple Cinnamon Candied Almonds

For many, many years I’ve been making Cinnamon Roasted Almonds for the holidays. I put them in little tins and tuck them into stockings. My nieces and nephews just love munching on them. And my sister loves that her kids are eating something BESIDES Christmas candy!


This year I decided it was time to up my game a little bit and add some maple flavor. As usual, I went searching the web to see what recipes might be out there and I ran across this one from Foodie with Family. It was uncannily similar to my own recipe, except it included maple syrup.

I wasn’t sure how well the syrup would work, but I figured eventually the liquid from the syrup would bake off. And guess what? It did! I like the light sugary crust it makes, which is quite a bit closer to the candied nuts you find at fairs and festivals.

What can you use Maple Cinnamon Candied Almonds for?

Of course, they are awesome for simple snacking. But you can use them for a topping for desserts such as poached pears or apples. Or tossed on ice cream with a good sauce like my brandied cherry sauce.

You can also chop these yummy almonds up and throw them in a salad. They add a delightful flair that goes especially well with berries or other fruit, like in my Strawberry Almond Salad. In that salad recipe, I actually used candied almond slices for that salad. So yes, you can make these candied almonds with either raw whole almonds or sliced almonds.

Regardless of how you use them, I think you’re going to love them. Add these to your list of must-makes this holiday season, give them to your friends and family. And watch their smiles widen as they munch on your new creation.

It’s quite easy! All you need is a little time, an oven, and a few ingredients. Oh and an electric mixer comes in handy. If you don’t have that, you can use a whisk, but it’ll take a bit more work.

Maple Cinnamon Roasted Almonds

Ingredients

Scale
  • 1/3 cup raw (turbinado) sugar – can sub white or brown sugar
  • 23 teaspoons cinnamon – or part cinnamon, part pumpkin pie spice
  • 3/4 teaspoon salt
  • 1 egg white
  • 1/3 cup real maple syrup
  • 12 teaspoons vanilla
  • 4 cups whole almonds (shelled)

Instructions

  1. Preheat oven to 250 F. Line a large rimmed baking pan with silicon baking mat or parchment paper.
  2. In a small bowl, stir together the sugar, cinnamon and salt.
  3. In a large bowl, use an electric mixer to whip the egg white until it’s white and frothy, but still liquid. Slowly add the maple syrup and vanilla, beating to incorporate them into the mix.
  4. Pour the almonds into the large bowl and stir until all the almonds are fully coated. Add the cinnamon sugar mixture, a bit at a time, stirring between additions.
  5. Pour the almonds onto the prepared baking sheet, including any liquid that remains in the bowl. Use a spatula to spread them out fairly evenly. Bake at 250 F. for 1 hour, stirring every 15 minutes. Let cool completely before eating.
