Grilled (or roasted) zucchini slices topped with scrambled eggs, cheese and super sweet roasted tomatoes that taste like candy, these low carb breakfast bites are a beautiful way to start your day! Also these zucchini rounds make a stunning dish for a weekend brunch.
Every time I start up the grill, I make it a point to grill some veggies alongside the meat. Even if I know I’m not going to eat the veggies that evening, I know that my future self will love having yummy grilled veggies on hand to play with on the following day(s). So last time my kids wanted grilled hot dogs, I sliced up one of my larger zucchini. Then while the hot dogs were cooking, I brushed the zucchini slices with oil and sprinkled with seasonings. Finally, I tossed them on the grill and cooked them to roasty perfection. (I’m not a fan of hot dogs, but I do love me some grilled zucchini!)
The next morning my son wanted biscuits. I had other plans forming in my mind. Like mowing the lawn before it got too hot outside. But I thought fine, I’ll make you your biscuits and THEN I’ll do my own thing. By the time I pulled the biscuits out of the oven, though, it was hot outside. Too hot to mow! And my own tummy was rumbling.
So I pulled my grilled zucchini rounds out of the fridge and topped them with more deliciousness. Eggs, cheese, roasted tomatoes. And fresh basil, of course! My taste buds, my tummy and my eyes were all glowing with joy over this little creation. Forget mowing. I’ll do that another day.
By the way, the colorful little tomatoes are from my garden. They’ve been producing like mad and I’m quite smitten with them!
How Healthy are these Breakfast Zucchini Rounds w/Roasted Tomatoes?
In case you were wondering, not only are these little bites low in carbs and gluten free, they are also a great source of fiber, lycopene and protein (from the eggs and cheese), not to mention numerous antioxidants. Altogether, these zucchini rounds are a great way to help lower your cholesterol, fend off cancer, boost your skin health and keep your digestive system running smoothly.

Ingredients
For the candied roasted tomatoes:
- About 1 lb. cherry or grape tomatoes (a mix of colors makes prettier presentation)
- 1 – 2 Tablespoons extra virgin olive oil
- 2 – 3 slices sweet onion, roughly chopped
- 2 – 3 cloves garlic, peeled & chopped fine
For the zucchini:
- Large zucchini slices 1/3 – 1/2 inch thick and about 3 inches in diameter
- Extra virgin olive oil
- Red Robin Seasoning or your favorite seasoned salt & Trader Joe’s 21 Seasoning Salute or your favorite no salt seasoning
For the rest:
- 1 – 2 scrambled eggs per person
- 1/4 cup shredded cheese per person
- Fresh basil leaves & flowers (optional)
Instructions
- Put the tomatoes on a rimmed baking sheet with the onion and garlic. Drizzle the olive oil over top to coat. Bake at 425 for 20 – 30 minutes.
- Brush both sides of the zucchini slices with olive oil and sprinkle with the seasonings. Grill on both sides until tender or set on a baking sheet and roast at 425 F. for about 15 minutes, or until tender.
- While the tomatoes and zucchini are cooking, scramble the eggs, leaving them a little wet. Top each zucchini slice with some of the scrambled eggs and about 1 Tablespoon of shredded cheese, then add 3-4 tomatoes along with some of the roasted onion.
- Set in the oven for about 5 – 10 minutes or until the cheese is melted. Garnish with basil leaves and flowers and serve!
Notes
You can make the zucchini and tomatoes ahead of time, then warm and assemble them when it’s time to eat.
