Breakfast Zucchini Rounds with Candied Tomatoes

For the candied roasted tomatoes:

  • About 1 lb. cherry or grape tomatoes (a mix of colors makes prettier presentation)
  • 12 Tablespoons extra virgin olive oil
  • 23 slices sweet onion, roughly chopped
  • 23 cloves garlic, peeled & chopped fine

For the zucchini:

  • Large zucchini slices 1/3 – 1/2 inch thick and about 3 inches in diameter
  • Extra virgin olive oil
  • Red Robin Seasoning or your favorite seasoned salt & Trader Joe’s 21 Seasoning Salute or your favorite no salt seasoning

For the rest:

  • 12 scrambled eggs per person
  • 1/4 cup shredded cheese per person
  • Fresh basil leaves & flowers (optional)

Instructions

  1. Put the tomatoes on a rimmed baking sheet with the onion and garlic. Drizzle the olive oil over top to coat. Bake at 425 for 20 – 30 minutes.
  2. Brush both sides of the zucchini slices with olive oil and sprinkle with the seasonings. Grill on both sides until tender or set on a baking sheet and roast at 425 F. for about 15 minutes, or until tender.
  3. While the tomatoes and zucchini are cooking, scramble the eggs, leaving them a little wet. Top each zucchini slice with some of the scrambled eggs and about 1 Tablespoon of shredded cheese, then add 3-4 tomatoes along with some of the roasted onion.
  4. Set in the oven for about 5 – 10 minutes or until the cheese is melted. Garnish with basil leaves and flowers and serve!

Notes

You can make the zucchini and tomatoes ahead of time, then warm and assemble them when it’s time to eat.
