Description
Crisp-tender roasted asparagus with a nice crunch on the ends along with tender, juicy mushrooms makes a beautiful side dish (or breakfast) in just minutes with a little help from the air fryer.
Ingredients
- 8 oz. fresh asparagus spears, cleaned and trimmed
- 4 oz. baby bella mushrooms, cleaned
- Olive oil (in a sprayer, or you can use a little drizzle)
- Red Robin Seasoning (or your favorite seasoned salt) and Trader Joe’s 21 Seasoning Salute (or your favorite no-salt seasoning)
Instructions
- Preheat the air fryer to 380 F. Clean both the asparagus and the mushrooms, then cut the mushrooms into quarters (if they’re larger) or halves (if they’re smaller). You want the mushroom chunks to all be about the same size. Set them all on a rimmed plate and spritz or drizzle with olive oil. Toss to coat, then sprinkle liberally with seasonings and toss again. I like to give them one more sprinkle and another light spritz of oil again, then one more gentle toss to make sure they all are well coated in oil and seasoned nicely.
- Gently pour the asparagus and mushrooms into the air fryer and shake to spread them out. (If your air fryer basket is small, you might want to do this in batches. It’s okay if they overlap a bit, but you want mostly a single layer in your air fryer, with a little space to let the air circulate.)
- Cook at 380 F. in the air fryer for about 6 – 8 minutes or until the asparagus is bright green and starting to sizzle and the mushrooms are cooked through. I like to give the basket a shake sometime in the midst of cooking to make sure they all get evenly cooked.
- When done, gently dump the asparagus and shrooms out onto your plate and serve!
Notes
Air fryers vary, so you might have to adjust the cooking time to suit your air fryer. I’ve provided the timing that works best in my Cosori air fryer. If you skip pre-heating, then your cooking time will be longer, but I highly recommend pre-heating! There’s a beautiful sizzle at the start and they cook so quickly and beautifully in a hot air fryer.
This dish is marvelous topped with a farm fresh egg with toast (as shown), but also makes a great side for steak, chicken, fish, or just about any main dish. For a plant-based meal, chop up the asparagus and toss with pasta and your favorite sauce or mix with brown rice or quinoa for a hearty plant-based meal.
