Creamy Tarragon Mustard Sauce

A quick herby sauce, salad dressing or dip, this simple creamy tarragon mustard sauce celebrates this beloved, easy to grow herb. Simply blend fresh tarragon, garlic and mustard with some plain Greek yogurt, a little mayonnaise and dill, extra virgin olive oil and onion powder. Then add milk to thin to the consistency you want. Plus a little fresh ground pepper to add some zip.

If you want a thick, creamy dip, use less milk. But if you want to drizzle it over a salad, salmon, or chicken, you’ll want a little more milk. Something about the fresh bitter sweet tarragon with the mustard blends so well with Greek yogurt and mayo. It’s a combination that I find, frankly, a little addictive. So I’m super grateful this sauce is quite healthy and full of protein.

Tarragon is floral and has a tremendously sweet and bitter taste. To best describe the properties of tarragon, I will compare it with other herbs and spices. At the first smell, tarragon has a pleasant fragrance of mint and vanilla. However, one bite will reveal its sweet but peppery qualities.

I’ve also seen many compare the flavor of tarragon to anise. Often used in French cooking, tarragon adds flair and a fancy twist to everything it touches. My best friend tells me she likes to put it on her toast! She talks about tarragon butter like it’s the best thing EVER. So yes, tarragon butter is definitely on my list.

How to use Creamy Tarragon Mustard Sauce?

So let’s get back to this sauce … this tarragon mustard sauce is so lovely and versatile! I imagine it could be used anywhere you want a little herby creaminess. I’ve dreamed up some great uses for you to try:

  • Use it as a dip for fresh veggies. This sauce/dip has me WANTING to eat more veggies because it’s just so dang good!
  • Dunk your fries or pretzels (especially soft, puffy homemade German pretzels!)
  • Drizzle it over salmon (or other fish), pork or chicken
  • Liven up roasted veggies like asparagus, cauliflower, mushrooms or broccoli
  • Use as a sandwich spread or sauce for a burger or steak
  • Enjoy as a salad dressing on just about any salad
  • Toss with fresh cucumbers and sweet onions for a different take on cucumber salad
  • Use as the sauce (in place of part or all the mayo) for potato salad, chicken salad, tuna salad or macaroni salad

Creamy Tarragon Mustard Sauce/Salad Dressing/Dip

Ingredients

Scale
  • 1/3 cup plain Greek yogurt
  • 1/3 cup mayo
  • 24 cloves garlic, peeled – or 1/2 teaspoon granulated garlic
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon sugar
  • 1 teaspoon extra virgin olive oil
  • 2 teaspoons – 2 Tablespoons good quality mustard (more or less to taste)
  • Several sprigs of fresh tarragon (6 – 8 sprigs about 6 inches long)
  • A small sprig of fresh dill or fennel
  • Freshly ground black pepper, to taste
  • Milk, to thin

Instructions

Put all ingredients in a mini food processor or smoothie size blender cup (I used my Ninja smoothie cup in my Ninja blender) and blend until smooth. Add 2 – 6 Tablespoons of milk to thin to desired consistency. Enjoy! Store any leftovers in an airtight jar (or covered container) in the fridge.
