Apple Crisp for One {Low Sugar}

We are on a mission to cut sugar from my daughter’s diet, per instructions from her doctor. We have hopes that this will help cure her dizziness problem. I feel so bad for the poor girl … she lived through Halloween without eating even a single piece of Halloween candy (meanwhile her brother was polishing off all the leftover candy right in front of her).


So when she asked me to make her some apple crisp, how could I say no? Even though I was wondering inside how I was going to pull this one off … that crumble on the top, doesn’t it NEED sugar to achieve that lovely crumble taste?

Well it turns out that it doesn’t. I did a little search on Google and quickly found a recipe on Homemade Adventure that doesn’t use any sugar OR artificial sweetener. I thought my sweetie girl probably wouldn’t go for that (she does still have a bit of a sweet tooth), so I added a little stevia and a tiny bit of maple syrup to the apple filling and some monkfruit sweetener (Nectresse) to the crumble topping. But I did taste the crumble before I added the monkfruit sweetener and it was pretty good without any sweetener at all. Amazing!

The secret, I think, is in the cinnamon. Cinnamon makes things taste sweeter without adding sugar. And it also happens to be really good for your health … did you know:

  1. 1/2 teaspoon of cinnamon per day can lower your bad cholesterol (or LDL). Cinnamon also has an anti-clotting effect on the blood.
  2. Cinnamon may help treat Type 2 Diabetes by lowering blood sugar levels and increasing the amount of insulin production in the body.
  3. If you mix honey and cinnamon, it can help relieve arthritis pain.
  4. When added to food, cinnamon inhibits bacterial growth and food spoilage, making it a natural food preservative.
  5. Just smelling cinnamon boosts cognitive function and memory.

Apple Crisp for my Girl {Low Sugar}

  • Prep Time: 15 minutes
  • Cook Time: 35 minutes
  • Total Time: 50 minutes
  • Yield: 1 serving 1x

Ingredients

Scale

For Apple “filling”:

  • 1 apple, chopped
  • 1/2 tsp cinnamon
  • 1/4 teaspoon nutmeg
  • A pinch of allspice
  • A pinch of cloves
  • 1/2 teaspoon maple syrup
  • 1/2 teaspoon vanilla extract
  • 14 drops of liquid stevia (or 1 packet of Stevia or 12 teaspoons brown sugar)

For the crumble topping:

  • 1 Tablespoon of butter (melted)
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 Tablespoon whole wheat flour
  • 4 Tablespoons oats (quick oats or old fashioned: either one)
  • 1 teaspoon Nectresse or Stevia (or 1 Tablespoon brown sugar)

For the top:

  • 1 teaspoon butter (chopped into small squares)

Instructions

  1. In a large ramekin, small oven-proof bowl, or small loaf pan coated with cooking spray, combine the filling ingredients and smooth it out as best you can.
  2. Then, in a separate bowl, mix up the crumble ingredients. Pour the crumble over the apple mixture and smooth it out so it’s nice and even all the way across.
  3. Dot the top with little butter squares and bake in a preheated 350 degree oven for 35 minutes or until the crisp is fragrant, brown on top and slightly crisped.
  4. Serve warm and enjoy!

I adapted this recipe from Homemade Adventure … Now my next challenge is to turn this into a full-size dessert … because I’m guessing she’s going to want it again … and again … and again …

I am so glad you and your daughter enjoyed the recipe! Best of luck in finding creative ways to cut out sugar 🙂 Bananas and applesauce make great natural sweeteners!

Thanks for posting this, I used the recipe and loved it. Me being me, I did make a number of changes, and since my version worked too, I’d like to tell you about them:

1. I used “Coconut Secret” brand raw coconut crystals in the crust. These are billed as being a low glycemic sugar alternative. I was impressed with how well the topping turned out. Of course, I don’t know how it would have worked with your recipe since I didn’t try it.

2. I put in a little lemon juice with the apples. Mainly because about every crisp or fruit pie I make calls for lemon juice and because it helps stop the apples from browning.

3. Left out the allspice, cloves and vanilla. I’m happy with just cinnamon and nutmeg and this simplifies the recipe.

4. I cut way back on the stevia in the filling. Apples are very sweet so I didn’t think I would need it, and I was right (but I like low sugar recipes so I may not be typical). I used 5 drops.

When I make the recipe again, I’ll leave out the maple syrup. I put in a little extra and I still couldn’t taste it.

Forgot to say, I used extra butter in the crust, just because I’m used to that.
