Deviled eggs are so good on their own, but when you add fresh dill and bacon to your deviled eggs, it takes the flavor from “good” to “AMAZING”! These bacon dill deviled eggs are high in protein and low in carbs and so so delicious.
At least that is what I thought when I tasted these deviled eggs with bits of bacon and fresh dill. I know it’s late in the season for fresh dill, but some of you more southern living people might still have some out in your garden. Strangely, it’s November in South Dakota and I still have fresh dill and kale growing in my garden. Global warming is so weird.
If you’ve been following my blog lately, you probably know that my dad went through chemotherapy for his cancer this year. He had a pretty severe form of cancer that required some very intense chemo – like a week in the hospital of constant chemo dripping 24 hours a day. He lost a lot of weight and red blood cells. And they told him to eat more protein. They did not care what kind of protein. He had carte blanche to eat whatever he wanted. Bacon. Ice Cream. Whatever! The message we got was just eat protein.
So I decided adding bacon to deviled eggs sounded like a really good idea. And dad agreed. He ate a bunch of these while he was in the hospital. And mom and I snacked on them when we had a moment to satisfy our own hunger after trips back and forth to the hospital.
If you’re on a heart healthy diet (like me and typically my dad), lower the amount of bacon you use and put a few crumbles of cooked bacon on top. When you do that, your tongue will sense the bacon first. And then you’ll still enjoy a satisfying bacon flavor while staying mostly within your heart healthy diet. If you want more bacon flavor without more bacon, try adding some bacon salt and limiting the citrusy garlic seasoning.

Ingredients
- 3 hard-boiled eggs
- 3 Tablespoons mayonnaise (or part mayo, part plain Greek yogurt)
- 1 – 3 teaspoons good quality mustard (or to taste)
- Fresh dill, snipped – or use dried dill, to taste
- Trader Joe’s Citrusy Garlic seasoning, to taste – or substitute lemon pepper and a pinch of granulated garlic
- 1 – 2 slices bacon, cooked and chopped
- For the top: Smoked paprika and (optional) snipped chives
Instructions
- Hard boil your eggs, then plunge into a water bath and, once cooled, peel off the shell. (See tips for helpful hints.)
- Cut the eggs in half lengthwise, then gently remove the yolks, placing them in a small bowl. Set the whites on a plate or deviled egg serving plate and set them aside.
- Mash the yolks with a fork, then add the mayo (and/or Greek yogurt, if using) and mustard and keep mixing until the mixture is smooth. Add dill and seasonings to taste and a bit of the chopped bacon.
- Spoon the yolk mixture into the shells with a small spoon, dividing the filling amongst the cooked egg white shells. Sprinkle the tops with smoked paprika and snipped chives or additional dill. Enjoy!
Notes
- My preferred method of making hard boiled eggs is in my Instant Pot. Add 1 cup water to the bottom of the pot. Set the grate in the bottom and set the eggs on top of that. Pressure cook on high for 5 – 6 minutes and then do a quick release. Scoop the eggs into an ice water bath to cool and stop the cooking.
- If you want that professional look by piping the filling into your deviled eggs, use dried dill and omit the bacon from the filling. Then keep stirring the filling until it is lump free. Personally, I feel this is extra work that you don’t really need to do.
