- 3 hard-boiled eggs
- 3 Tablespoons mayonnaise (or part mayo, part plain Greek yogurt)
- 1 – 3 teaspoons good quality mustard (or to taste)
- Fresh dill, snipped – or use dried dill, to taste
- Trader Joe’s Citrusy Garlic seasoning, to taste – or substitute lemon pepper and a pinch of granulated garlic
- 1 – 2 slices bacon, cooked and chopped
- For the top: Smoked paprika and (optional) snipped chives
Instructions
- Hard boil your eggs, then plunge into a water bath and, once cooled, peel off the shell. (See tips for helpful hints.)
- Cut the eggs in half lengthwise, then gently remove the yolks, placing them in a small bowl. Set the whites on a plate or deviled egg serving plate and set them aside.
- Mash the yolks with a fork, then add the mayo (and/or Greek yogurt, if using) and mustard and keep mixing until the mixture is smooth. Add dill and seasonings to taste and a bit of the chopped bacon.
- Spoon the yolk mixture into the shells with a small spoon, dividing the filling amongst the cooked egg white shells. Sprinkle the tops with smoked paprika and snipped chives or additional dill. Enjoy!
Notes
- My preferred method of making hard boiled eggs is in my Instant Pot. Add 1 cup water to the bottom of the pot. Set the grate in the bottom and set the eggs on top of that. Pressure cook on high for 5 – 6 minutes and then do a quick release. Scoop the eggs into an ice water bath to cool and stop the cooking.
- If you want that professional look by piping the filling into your deviled eggs, use dried dill and omit the bacon from the filling. Then keep stirring the filling until it is lump free. Personally, I feel this is extra work that you don’t really need to do.
