An easy, quick, low-carb dish to honor St. Patrick’s Day that is delicious, nutritious and fulfilling. I’ve had this for lunch several times this week and even for breakfast once … and today at the end of the day at work, I was in a food emergency state because I just hadn’t eaten enough, so I had this for dinner too (although I don’t normally eat dinner … but today, I needed it!)

I do kinda find myself wanting some mashed potatoes with this dish … I really feel like it would be even better over a bed of bacon buttermilk mashed potatoes, but I didn’t have any potatoes on hand and yeah, while potatoes are a very healthy food, potatoes do contribute to the carb factor.
Potatoes are totally healthy carbs, though, especially if you include the skins, but yeah, I’m wary of carbs. Especially after I’ve eaten a bunch of sugar or other BAD carbs that got my weight sliding up on the scale. Like, for example, that Bailey’s Chocolate Poke Cake that I made for my friend/coworker Amber’s birthday. Hey life is all about balance, right? … you need to indulge yourself sometimes and then listen to your body and balance it out by bringing it back to healthy. And cabbage is low and calories and so good for you!
Whether or not the meats are healthy depends on how many and which type of “bangers” (sausage) that you choose to include. For healthier options, look for sausages with only ingredients you recognize (i.e., no strange chemicals) and then look at the fat and calorie content. Typically chicken or turkey sausage will be much lower in fat and calories.
The cheese is totally optional. But cheese just makes me happy. If it’s not that way for you and/or you want to save on calories, just leave out the cheese. Listen to your body (and taste buds!) and adjust accordingly.
PrintBangers with Beer Braised Cabbage
- Prep Time: 5 minutes
- Cook Time: 10 minutes
- Total Time: 15 minutes
- Yield: 2 - 4 servings 1x
Ingredients
- 1/2 Tablespoon butter
- 2 – 4 sausages, sliced (I used 2 chicken sausages)
- 1/2 of a yellow onion
- 1 – 2 large cloves of garlic
- 1/2 of a medium cabbage, sliced thin
- a splash of Irish ale
- Red Robin Seasoning (or salt) & freshly ground pepper, to taste
- For the top: shredded Irish cheese (optional)
Instructions
- In a large saute pan over medium heat, melt the butter, then add the sausages, onion and garlic, Saute for several minutes until the onion is soft and translucent.
- Add the cabbage and a splash of Irish ale. Cover and cook for a few minutes, then uncover and stir. Cover again and cook for a few more minutes, until the cabbage is wilted but still crisp tender.
- Serve topped with a bit of shredded Irish cheese if desired.
Notes
If you add cheese, I recommend a good quality Irish cheese like Dubliner or Skellig from Kerrygold.
