Ingredients
Scale
- 1 – 2 teaspoons olive oil
- 3/4 cup chopped onion
- 2 cloves garlic, peeled & chopped
- 3 – 4 cups fresh spinach, chopped
- 3/4 cup frozen corn, thawed
- 2 cups cooked quinoa
- 1 Tablespoon fresh basil, chopped
Instructions
- Heat the olive oil in a frying pan over medium heat. Add the onion and garlic and saute until the onion is soft & translucent.
- Add the spinach, cover and cook, stirring occasionally, until the spinach is wilted. Stir in the corn until warm, then the quinoa, then the basil.
- Cook until all is nice and hot, then serve with fresh basil as a garnish if desired.
