Blueberry Gooseberry Smoothie ~ Sumptuous Spoonfuls #smoothie #recipe

I have three big bags of frozen gooseberries in my freezer, from my friend who has a very lively and productive gooseberry bush. I was so pleased to have them because I ADORE gooseberries, but they are such a rich-tasting fruit, I’ve been a little puzzled about what to do with all these lovely green berries. They are really good in pie, but I’m not much of a pie-baker, and they make a fantastic sauce for ice cream or cheesecake, but other than that, whatever do you do with gooseberries?


Well, one of my foodie friends, Saju’s Tastes the other day shared a gooseberry juice recipe … that recipe got me thinking: if I can use gooseberries in juice, why not in smoothies?

So I tried it, and yes, they are marvelous! I thought it would be best to add in another type of berry because yes, gooseberries can be a little rich tasting. But in a smoothie, with a few blueberries (and a bit of banana to add a little sweet and creamy), yes, they ARE quite marvelous! Next time I’m going to try adding in a bit of ginger sugar or fresh ginger, because I just have a feeling ginger would be SO good with these little green wonder berries.

Blueberry Gooseberry Yogurt Smoothie

  • Prep Time: 5 minutes
  • Total Time: 5 minutes
  • Yield: 1 - 2 servings 1x

Ingredients

Scale
  • 1/2 cup fresh or frozen gooseberries
  • 1/2 cup fresh or frozen blueberries
  • 1/2 of a banana, peeled and frozen
  • 1/2 cup lowfat or nonfat vanilla yogurt
  • 1/2 cup lowfat milk (I used 1%)

Instructions

  1. Put all ingredients in a blender and blend till smooth. Pour into glasses and enjoy!

Notes

For a thicker smoothie, use frozen fruit. I used frozen gooseberries and bananas and fresh blueberries.
