Super fun, super fast, and super healthy, these breakfast banana splits with Greek yogurt, granola, fresh berries and a yummy peanut butter drizzle will totally start your day out on a playful note!
When I first saw these breakfast banana splits, I was totally smitten. They looked SO fun, I couldn’t wait to try it … And I thought it was something I definitely wanted to make for the nieces and nephews next time we got together.
So I ran to the store and got some Greek yogurt and I made my own peanut butter granola … because you know, who doesn’t do that? (JK, I know I’m a weirdo do-it-yourselfer when it comes to food.)
On Easter weekend, my whole family got together. I brought my banana split dishes (that I inherited from a friend), a big container of strawberries and Greek yogurt. Surely my parents would have bananas … they always have bananas, don’t they?
Well yes, they did have bananas, but they were really green. Definitely NOT banana split material … Darn! That blew my breakfast banana split idea out of the water. I made them a crescent roll breakfast wreath and crescent roll danishes instead.
Maybe next time we can make the breakfast banana splits. BUT I thoroughly enjoyed MY breakfast banana split. It transported me back to childhood memories and trips to Dairy Queen … andI felt good about eating it, because it was full of good-for-me fruits, along with heart healthy nuts and oats and protein and probiotic-rich Greek yogurt.
The drizzle of peanut butter, though … THAT was my favorite part, along with the juicy red strawberries. Okay the play of crunchy, creamy and sweet juicy textures had me too. And I just LOVE having dessert for breakfast. It makes me feel a little bit naughty, but in a justified, yet responsible grownup sort of way. If you really want to take them over the top, add a bit of whipped cream and a few sprinkles to the mix.
Who says you’re not supposed to play with your food? Food is one of my favorite ways to play!

- Prep Time: 10 minutes
- Total Time: 10 minutes
- Yield: 1 serving (or 2 small servings) 1x
Ingredients
- 1 banana, cut in half lengthwise
- 1/2 cup vanilla Greek yogurt
- About 2 Tablespoons peanut butter chia granola (recipe here – or subsitute your favorite granola)
- A few fresh strawberries, cut into small chunks
- About 1 Tablespoon peanut butter, melted
Instructions
- Peel the banana, cut it in half lengthwise and set in a banana split serving dish.
- Add the Greek yogurt down the center. Sprinkle with granola and strawberries.
- Put the peanut butter in a small bowl and put in the microwave for about 10 seconds or until it is melted. Use a spoon to drizzle the peanut butter all over. Enjoy!
