Spruce up your morning hash by adding earthy mushrooms, crisp tender broccoli and chopped sweet onion! This combination of ingredients makes the perfect healthy breakfast for one or two. Add a bit of cheese and an egg on top and you have a nice balanced breakfast.
I just love putting mushrooms and veggies in my hash. It lowers the carb content, provides more interesting flavors, colors and textures and makes me feel pretty dang awesome (and honestly kinda proud) because I’ve already fit in a nice serving of veggies right away in the day. This kinda breakfast makes my taste buds and my body happy and helps my whole day go better. I’m getting enough potatoes in to make me feel like I actually had HASH for breakfast (because I did), but not so much that I feel weighted down from carb overload.
Broccoli might not strike you as a breakfast food, but really, it goes SO well with mushrooms and potatoes, well, it’s kinda like they were just meant to be together. Broccoli is also brilliant with eggs, so (if you are so inclined), putting an egg on top just makes sense.
This is an easy breakfast I like to cook up for myself even on a busy workday. I also sometimes like to make extra hash so I have leftovers for future busy mornings. Then I can run in the kitchen, heat up my hash in the microwave while I’m cooking up an egg, and in just a few minutes I have a fabulous hot, healthy breakfast.

Ingredients
- 1 Tablespoon grass-fed butter (or olive oil)
- 1 medium golden potato, cut into small chunks
- 4 oz. baby bella mushrooms, sliced/roughly chopped
- 1/3 cup chopped sweet onion
- 1 cup frozen broccoli florets
- Red Robin Seasoning (or your favorite seasoned salt), Trader Joe’s 21 Seasoning Salute and freshly ground pepper
- Optional: cheese and/or egg(s)
Instructions
- Heat a small nonstick frying pan over medium heat. Add the butter and as soon as it is all melted and bubbly, use a spatula to coat the bottom of the pan.Add the potatoes, stir, then cover and cook until the potatoes are browned on the bottom. Stir, then cover and cook a while longer until the potatoes are fork-tender, checking the potatoes occasionally and stirring as needed.
- Stir, then add the mushrooms and onions, sprinkle generously with the seasonings, then stir again, cover and cook until the mushrooms and the onions are tender, uncovering to stir every few minutes.
- While the potatoes and mushrooms are cooking, put the broccoli in a bowl and microwave for about 1 minute or until the broccoli is mostly thawed. Chop the broccoli roughly, then stir into the potato/mushroom mixture. Sprinkle again with seasonings and continue to saute just until the broccoli is hot and crisp/tender.
- If desired, melt cheese on the hash and top with your favorite style of egg. Enjoy!
