Sweet roasted butternut squash rounds with creamy melted brie and tart sweet & juicy pomegranate seeds, this simple three-ingredient recipe makes a stunning, impressive appetizer. Press a few chopped, roasted pistachios on top as well for an extra layer of crunch and color.
Or, in place of the pomegranate seeds, top them with a dollop of your favorite homemade cranberry sauce and candied walnuts. Whatever you choose for a topping, the butternut/brie pairing provides a delicious base to start from.

My parents always plant lots of squash and pumpkins so we are never wanting for squash in my family. Even though the crop was smaller than usual this year, I still have way more than enough. One day I looked at my butternuts. And I noticed a smaller one where the neck was just the right size to make butternut bites. And I found goat’s milk brie at Aldi. Normally I’m not a big fan of brie. BUT I’m always enticed by those melted brie appetizers. So THIS I couldn’t resist. I just HAD to melt some brie on my butternut.
If your butternut has a wider neck, just cut the rounds into quarters. Or make bigger side-dish sized butternut rounds.
Simplicity for the Holidays
Even though I’m definitely guilty of going over the top when it comes to food for the holidays, lately I opt for simplicity. Sometimes a few simple ingredients can really steal the show. That’s what I was going for here.
Make sure you have a good butternut squash to start with. Because when you’re focusing on a few simple ingredients, you want to make sure you choose well. Find a butternut that is ripe and sweet. You can look for tips for choosing your squash here.

Description
Roasted butternut squash topped with creamy melted brie cheese and sweet juicy pomegranate arils.
Ingredients
- 1 butternut squash
- Extra virgin olive oil
- Salt & pepper
- A round of brie cheese
- For topping: fresh pomegranate seeds and/or chopped pistachios, cranberry sauce and candied walnuts
Instructions
- Preheat the oven to 400 F. Line a rimmed baking sheet with silicon baking mat or spray lightly with cooking spray.
- Peel the butternut squash and cut the neck of the squash into 1/2-inch slices. If your squash is large, you might want to cut the rounds into halves or quarters. Save the bowl of the butternut for other uses.
- Brush both sides of the squash rounds with olive oil and sprinkle with salt & pepper.
- Set the squash on the prepared baking sheet and bake for about 20 minutes, until tender. While the squash is cooking, cut small wedges of brie from the round, one small wedge per bite.
- Put one small brie wedge on each roasted squash bit and set back into the oven briefly to melt the cheese.
- Top with fresh pomegranate seeds and (if desired) chopped pistachio. Or put a bit of cranberry sauce and a candied walnut on each slice. Serve warm or at room temperature and enjoy!
Notes
You can try sprinkling the squash with seasonings if you like. I tried garlic and sage, but decided I liked it better without the extra seasonings.
