Ingredients

- 1/2 cup finely chopped onion
- 2 cloves garlic, peeled & chopped
- 3 campari tomatoes, chopped fine (or 3/4 cup chopped garden tomatoes)
- 1/2 cup frozen sweet corn (or fresh cooked, cut off the cob)
- 1 – 4 teaspoons finely chopped mixed hot peppers (or to taste … I used a mix of jalapeno, carrot peppers and salsa peppers)
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon cumin
- 1 cup cooked mixed beans (recipe here), rinsed
- About 1/4 cup fresh chopped cilantro leaves
Instructions
- In a small mixing bowl, stir together the onion, garlic, tomatoes, corn, 1 teaspoon hot peppers, salt and cumin.
- Rinse the beans, then fold them in gently with the cilantro. Taste and add more hot peppers until the desired level of heat is achieved. Adjust the salt to your liking.
- Serve with tortilla chips or just eat with a spoon! Also awesome spooned over chicken, pork or burgers … or added to tacos, enchiladas or burritos.
