Ingredients
Scale
For the dressing:
- 1/4 cup plain nonfat yogurt
- 2 teaspoons maple syrup
- 1 1/2 – 2 teaspoons ginger sugar (or 1 teaspoon sugar + 1 teaspoon finely chopped candied ginger)
- About 1/2 teaspoon grated orange zest
- About 1 teaspoon fresh squeezed orange juice
For the salad:
- Mixed greens
- Peeled, sliced oranges (I used Cara Cara oranges)
- 2 – 3 chunks of candied ginger, chopped
- About 1 Tablespoon pine nuts (pinons), toasted
- About 1 Tablespoon crumbled feta cheese
Instructions
- Cover your salad plate with greens.
- Arrange the orange slices on the greens, then sprinkle with candied ginger, pinons, & crumbled feta cheese.
- Drizzle with yogurt dressing and enjoy!
