Cashew Ranch w/Pantry Ingredients

Description

Rich and creamy ranch dressing with no eggs, no dairy, and no mayo! Super easy to make using standard pantry ingredients.

 


Ingredients

  • 1/4 cup aquafaba (liquid from cooked chickpeas or other beans)
  • 1/4 cup roasted, salted cashews
  • 2 Tablespoons avocado oil
  • 1/2 teaspoon dijon mustard
  • 1/2 teaspoon apple cider vinegar
  • 1/4 teaspoon granulated garlic
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon dill
  • 1/8 teaspoon Italian Seasoning
  • A pinch of salt (or to taste)

Instructions

  1. Put the aquafaba in a small blender cup or immersion blender safe cup. Blend for 2 – 5 minutes, until white and frothy.
  2. Add the remaining ingredients (besides salt) and blend another minute, until the cashews are incorporated into the liquid and the dressing is nice and smooth. Taste and add a bit of salt if desired.  Use for salads or dipping.
