Ingredients

For the cherry syrup:
- 11 oz. pitted sweet cherries
- 1 cup sweet red wine
- 1/4 – 1/2 cup sugar
- 1 shot cherry brandy
For each mojito:
- Fresh mint leaves
- Several fresh sweet cherries
- A good wedge of lime
- 1 shot cherry syrup
- 1 shot rum
- Ice
- Club soda
Instructions
- To make the syrup: put the cherries, red wine, sugar and brandy in a small saucepan and bring to a boil. Reduce heat and let simmer for 10 – 15 minutes. Strain the juice from the cherries and reserve cooked cherries for another purpose. Let the syrup cool.
- To make the mojito: in a tall glass, put several mint leaves, a few of the cooked cherries and a wedge of lime. Add a shot of cherry syrup and muddle together with a spoon to mix and release the flavors of the cherry, mint & lime. Fill the glass most of the way with ice, then add rum and top with club soda. Stir to mix.
- Garnish with cherries, mint and/or fresh lime wedges. Taste and add syrup, rum or lime juice as desired. Enjoy!
