with walnuts & dark chocolate chips
A fiber-rich banana bread filled with dark chocolate, walnuts and a bit of crunch from chia seeds. It’s a heart healthy banana bread you’re going to love eating.
I got the idea of this banana bread when I had 3 bananas ripening on my island and nobody was eating them … and on top of that, a huge chocolate craving. I thought about my nutty oat bran bread and wondered: could I do something similar with banana bread? (and add chocolate)
I’ve been eating my nutty oat bran bread a lot lately. Avocado toast on a nice warm, thin slice of nutty oat bran bread provides about half of the fiber I need for the day. That’s pretty dang awesome. But what if I could get similar benefits with a healthy side of potassium and also satisfy my chocolate craving at the same time?
That’s what I was going for … and I have to say, I totally rocked it. Yes, you can substitute oats and chia seeds for flour and come out on the other side with a banana bread that looks and tastes like banana bread. And tastes pretty dang fabulous, imho.
To make this yummy bread gluten free, substitute brown rice flour for the whole wheat flour and make sure you use gluten free oats.
Now, if you’ll excuse me, I think I hear a slice of banana bread calling my name …

- Prep Time: 15 minutes
- Cook Time: 1 hour 15 minutes
- Total Time: 1 hour 30 minutes
- Yield: 1 loaf (or two mini loaves) 1x
Ingredients
Wet ingredients
- 3 very ripe bananas, mashed
- 1/4 cup sugar
- 1/4 cup real maple syrup
- 1/2 cup plain nonfat yogurt
- 2 teaspoons vanilla
- 1 egg
- 1/4 cup melted grass fed butter or heart healthy oil
For the dry ingredients:
- 1/2 cup white whole wheat flour
- 3/4 cup oat bran or old fashioned oats
- 1/4 cup chia seeds
- 1/4 cup flax meal (ground flax seeds)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
Mix ins (optional):
- 3/4 cup dark chocolate chips
- 3/4 cup toasted chopped walnuts
Instructions
- Preheat the oven to 350 F. In a medium mixing bowl, mash the bananas with a fork or potato masher, then stir together the wet ingredients.
- Sprinkle the dry ingredients over, then stir in until well mixed. Add the mix ins and stir again to incorporate them.
- Spray a 9×5 inch loaf pan with cooking spray (or use oil or butter), then pour the batter into the pan. Bake at 350 F. for 1 hour 15 minutes or until a wooden pick inserted in the center comes out clean.

Delicious! This isn’t a light cake, it’s dense and moist and tastes lovely and nutty. It stayed fresh (in a Tupperware box) for a week and was probably at its best on day 3. Highly recommend adding both the chopped walnuts and the chocolate chips, which make the cake really decadent and gives it a nice crunch. I’m going to be making this for years to come.
