Description
Sweet, tender roasted delicata squash with crunchy apples and chicken over a bed of greens, topped with crumbled goat cheese and crunchy pepitas, then drizzled with a maple dijon white wine vinaigrette, this delightful salad is a satisfying meal full of lovely contrasting flavors and colors.
Ingredients
- Garlic sage roasted delicata squash slices (recipe here)
- Maple dijon white wine vinaigrette (recipe here)
- Several large kale leaves, stems removed + 1/2 – 1 Tablespoon extra virgin olive oil (or other salad greens of choice)
- Leftover chicken (warmed) or breaded chicken tenders, cooked and chopped
- 1 honeycrisp apple (or other sweet crunchy apple), cored and chopped
- Crumbled feta or goat cheese
- Roasted pepitas
Instructions
- Roast the squash using this recipe. While the squash is roasting, prepare the dressing.
- Cut the stem from the kale leaves, then place in a bowl and drizzle with olive oil, then using your fingers, massage the oil into the kale for a few minutes. This will help reduce any bitterness in the kale. Chop the kale into small pieces and divide amongst your salad bowls.
- Top with the warm chicken, apple chunks and delicata squash slices. Sprinkle with cheese crumbles and pepitas, then drizzle with the vinaigrette. Enjoy!
