Decadent soft and buttery dark chocolate brownies with chopped tart, chewy dried cherries, topped with a white chocolate ganache drizzle and more chewy dried cherries.
My work friend Tyler happened to have a birthday last week and I asked him what his favorite flavor was. He didn’t really tell me, but I knew (from past experience) that he loves cookies, so I took a little gamble and hoped that he would like brownies. I made them gluten free in case he wanted to share with our other teammate who is gluten free. I took them to work and gave them to him at our morning “standup” where we talk about what we did yesterday and what our plan is for today. He took the brownies and said that was what HE was going to work on that day. He did put a pretty good dent in them too!
The dried cherries were an impulse purchase just because I saw them at the store and they looked so yummy. I love cherries and thought they would be great for baking and for salads. They are a little intense on their own, but they really added a wonderful depth of dark flavor to the brownies. I have to admit, I helped Tyler a little more with the eating of these brownies than I had really planned to. With 12 Tablespoons of butter in the recipe, you can’t really call them healthy, but if you cut them small and eat them as occasional treats (and share them!), they can definitely fit into a a healthy meal plan.

- Prep Time: 15 minutes

- Yield: 12 - 24 brownies (depending on how big you cut them) 1x
Ingredients
- 1/2 cup brown rice flour
- 1/4 cup coconut flour
- 1/4 cup tapioca flour
- 1 cup sugar
- 1/2 cup dark unsweetened cocoa
- 1/2 teaspoon salt
- 1/2 cup chopped dried cherries
- 2 eggs
- 1 1/2 sticks butter or margarine or 12 tablespoons, melted
- 2 teaspoons vanilla extract
For the topping:
- 1 1/2 oz. white chocolate, melted
- 1 Tablespoon fat free half & half (or regular half & half)
- About 1/4 cup chopped dried cherries
Instructions
- Preheat the oven to 350 F. Spray a square 9 x 9 x 2 inch pan with cooking spray.
- In a large mixing bowl, stir together the flours, sugar, cocoa, and salt. Toss in the cherries and stir. Stir in the eggs, butter and vanilla until well mixed. Pour the batter into the baking pan and spread it out evenly in the pan.
- Bake at 350 for 30 – 35 minutes or until a toothpick inserted in the center comes out clean.
- In a small bowl, melt the white chocolate by microwaving for 1 minute, then stir. If not melted yet, microwave another 30 seconds and stir again. Once the chocolate is melted, then stir in the half & half. Drizzle over the top of the brownies and then sprinkle with chopped cherries.
- Let cool slightly, then cut and serve.
Notes
You can easily make these “regular” brownies by substituting a cup of all purpose flour in place of the 3 special gluten free flours.
