Ingredients

- 1 cup natural peanut butter
- 1 tablespoon honey
- 1/4 cup brown sugar
- 2 teaspoons pure vanilla extract
- 1 egg
- 1 cup old fashioned rolled oats
- 1/2 cup oat flour (ground oats), plus 2 tablespoons
- 1/4 cup powdered peanut butter (I used PB2)
- 1/4 cup vanilla protein powder
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 3/4 cup milk
- 1/4 cup roasted peanuts, roughly chopped
- 1/2 cup dark chocolate chips
- For the top: 1/4 cup mini chocolate chips
Instructions
- Preheat the oven to 350 F. Spray a 9x9x2 inch square baking pan with cooking spray.
- Put the peanut butter in a large mixing bowl and microwave on high for 30 seconds to soften it. Stir in the honey, then the vanilla and egg until well mixed.
- Add the dry ingredients and stir to mix, then stir in the milk, then the peanuts & dark chocolate chips. Pour the batter into the prepared pan and sprinkle with mini chocolate chips.
- Bake at 350 F. for 20 – 25 minutes or until the edges are nicely browned and a toothpick inserted in the center comes out clean.
