Irish chicken Colcannon Pie For Two

Salutations Ms Ann (tipping hat) I would like to make this for the Bishops visit on Sunday, however I need to put it in a 9*13 casserole dish to feed the church at the potluck. Also I need your Colcannon recipe since I have no leftover Colcannon. I live in a boarding house type place (6 guys one refrigerator) so no room to store leftovers. Basically I will need to make this right before church. Can you please help me out with the recipe(s) sized up for a 9×13 dish? Thank you

Hello Bob,

Each of my recipes has a 1x 2x and 3x button that makes it easy to scale up to twice or three times the size.

Here’s my recipe for Colcannon: https://www.sumptuousspoonfuls.com/colcannon-with-red-onion-bacon/ You probably want to double (or possibly even triple) the colcannon recipe for what you’re doing. If you have extra colcannon, I’m sure that people will gobble that up at the potluck too!

For the filling, I would click the 3x button and then double that. This is just my guess as I have not tried it! But I think the recipe is pretty forgiving in terms of adding a bit more of this, a bit less of that.

In our Hawaiian rolls recipe do you put the melted butter in the bread machine with everything else

Hello Renee!

Yes, I put the melted butter right in there with the rest of the ingredients. I do try to make sure it isn’t touching the yeast at the beginning. The cold milk will balance out the heat of the butter.

What exact Sherry do you use in the cream tomatoe bisque soup with marinated feta? Is it cooking sherry? Sherry vinegar? What exactly is used?
