Transform your leftovers from St. Patty’s Day into a delightful bite-size snack! Stir together chopped corned beef, colcannon (or mashed cauliflower or mashed potatoes), cooked cabbage with some cream cheese and Irish cheddar, stuff into baby bella mushroom caps, top with a bit more cheese then bake and 15 minutes later you will be munching in high style.
These little bites were an after yoga craving. Sometimes I come home from yoga absolutely STARVED. I don’t think this morning’s yoga class was terribly hard or anything, but maybe it was a harder workout than I thought because I really needed some good hearty food in my belly after got home! I thought about the corned venison in my fridge and that sounded awfully good, mixed up with some braised cabbage (I used my butter braised cabbage … recipe here!) and baked into baby mushroom caps with melty cheese. Oh man …. my mouth was drooling a bit just thinking about it. My cauliflower colcannon hopped out of the fridge and wanted to join the party, so I stirred some of that in as well. (If you don’t have cauliflower colcannon about, substitute mashed cauliflower or mashed potatoes … use what you’ve got!)
I was so hungry I was literally chowing down on a bunch of the cabbage and the corned beef too before I’d even started finished mixing up the filling. Then I was stuffing bunches of the filling in my mouth! I managed to get six mushrooms stuffed and into the oven, though, which was quite a feat given how good that filling was tasting … I am glad I munched on some filling, though, because that gave me enough strength and patience to take some photos after the mushrooms came out of the oven.
My basil plant is flowering so I threw some pretty basil flowers and a couple leaves on top for garnish. I really loved the flavor of the basil on top of the cheesy beefy goodness. (Hey, you gotta pick the flowers when they appear or the basil plant will think it’s done and die off!)
After all of that munching it only took about 2 mushrooms before my craving was finally satisfied. I’ll save the other 4 lovelies for later.
By the way, I need to mention that not only are stuffed mushrooms awesome party food, stuffed mushrooms are the absolute perfect thing to eat if you’re trying to lose weight (or maintain it) or if you just want a healthy low carb snack. They are hearty, filling, super low in carbs and calories, totally healthy and so delicious!

- Prep Time: 10 minutes
- Cook Time: 15 minutes
- Total Time: 25 minutes
- Yield: About 8 stuffed mushrooms 1x
Ingredients
For the stuffing:
- 2.5 oz chopped corned beef (1/2 – 3/4 cup)
- 1/4 cup leftover cauliflower kale colcannon (recipe here or substitute mashed cauliflower or mashed potatoes)
- 1/4 cup leftover cooked cabbage, chopped
- 1 oz. Greek cream cheese (or Neufchatel), softened
- 1 oz. finely shredded Irish cheddar cheese (such as Kerrygold Skellig)
- 1 teaspoon dijon mustard
And the mushrooms:
- About 8 baby bella mushrooms, caps removed
- Extra shredded cheese, for the top
- Fresh basil leaves or flowers , for garnish (optional)
Instructions
- Preheat the oven to 375 F. In a small mixing bowl, mix together the stuffing ingredients, reserving a bit of the shredded cheese for the tops.
- Remove the stems from the mushrooms and stuff generously with the filling. Top each cap with a bit of extra shredded cheese
- Bake at 375 for about 15 minutes or until the filling is hot, the mushrooms are tender and the cheese is nicely melted.
