Cranberry Ginger Holiday Punch

Ingredients

For the rosemary red wine simple syrup:

  • 1 cup sugar
  • ½ cup red wine or grape juice
  • ½ cup water
  • A sprig or two of fresh rosemary or lavender
  • 1 teaspoon vanilla

For the punch:

  • 60 oz. cranberry pomegranate juice
  • 2 cups orange juice
  • ½ cup pomegranate juice
  • 12 cups spiced rum (optional … or to taste)
  • 1 cup rosemary simple syrup
  • 1 12-oz. ginger beer (for non-alcoholic, use N/A ginger beer)
  • 1 liter of club soda (or you could substitute a bottle of prosecco)
  • For garnish: slices of oranges and apples, fresh cranberries

Instructions

  1. To make the simple syrup: put the syrup ingredients in a small saucepan and stir together. Bring to a boil, then reduce heat and let simmer for about 10 minutes. Let cool, then strain out the rosemary. Store in a jar in the fridge until cold.
  2. At party time, in a punch bowl or large pitcher, add the juices, rum and syrup. Pour in the ginger beer and club soda. Add slices of fruit and/or fresh cranberries for garnish and extra flavor. If you’re serving in a punch bowl, an ice ring is a nice touch. If you don’t have an ice ring, have a bucket of ice cubes ready on the side so guests can add ice to their punch as they please.
