This creamy avocado dip has a little heat from the jalapenos. I was aiming to make an avocado salsa, like I’ve had in Mexican restaurants, but it came out thicker, so I decided it’s an avocado dip. It’s a little like guacamole, but with a much creamier texture. The flavors are intoxicating, the kick from the jalapeno is divine, with an undertone of cilantro that makes my taste buds want to dance.
I tried to get this blog post done last night, but sometimes after a big creative cooking storm in my kitchen, I sit down to blog about it and I have no words. I’ve used up all my creative energy in the kitchen and I’m empty. That’s what happened last night. This morning I have found my words again and it’s easy to write. I guess I just needed to give my brain a rest.
I made this lively avocado dip for a breakfast burrito event at work and everyone loved it. It is divine on eggs and with tortilla chips too, but you could also use it on sandwiches, breakfast burritos, nachos, quesadillas, you name it. I like to dip carrot chips in this stuff for a healthy snack in the afternoons.
