Ingredients
- 3 – 5 oz. Divine dark chocolate (or other)
- 1/2 cup granola (it’s best to use a granola without large nuts or chunks)
- 1/4 cup roasted pepitas
- 2 – 3 Tablespoons chia seeds
- Whole prunes
- Walnuts, toasted
- Fine himalayan salt (or sea salt), optional
Instructions
- Melt the chocolate in a double boiler or in a bowl in the microwave (see notes for tips). In a separate bowl, stir together the granola and pepitas, then sprinkle the chia seeds on top. Line a baking sheet with silicon baking mat or wax paper.
- Make a dipping station with prunes on left, then melted chocolate, then granola mixture, then the prepared baking sheet. Using a fork, pierce a prune enough to hold it securely, dip the bottom in chocolate, tap or gently shake a few times to release excess chocolate, then dip the bottom of the prune in the granola mixture. Set on the baking sheet.
- Repeat with prunes until you are running low on chocolate and/or granola. Grab a walnut top with your fingers, dip the bottom in chocolate and press it down into the top of one of your prune turtles. Repeat until all the turtles have walnut “shells”. Sprinkle lightly with a bit of salt (optional, but enhances the flavors).
- Put the tray in a cool spot and let them sit until the chocolate is set and hardened. Move to a sealed container for storage. Store at room temperature or slightly cooler.
Notes
To melt chocolate in the microwave: put it in a microwave-safe bowl. Microwave on high for 90 seconds, then stir vigorously until most of the chocolate is melted. If needed, microwave another 30 seconds and stir again.
