Dry ingredients:
- 2 cups white whole wheat flour
- 1 1/2 cups sugar
- 1/4 cup Divine cocoa powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1/4 teaspoon cinnamon
- 1/8 – 1/4 teaspoon cayenne pepper (optional)
Wet ingredients:
- 1/2 cup avocado oil
- 2 teaspoons real vanilla extract
- 2 cups (packed) finely shredded zucchini
- 1 Tablespoon brewed chai tea, coffee or water
Mix in: 1/2 cup chopped walnuts, toasted (optional)
Instructions
- Preheat the oven to 350 F. Spray a 13 x 9 x 2 inch pan with cooking spray.
- In a medium mixing bowl, whisk together the dry ingredients. Stir in the wet ingredients until fully mixed. The dough will be very thick, like cookie batter. Let the dough sit for at least 15 minutes to let the moisture from the zucchini start to soak up the flour. You’ll notice the batter will start to soften and look a little more like brownie batter. Stir in the walnuts.
- Spread the batter evenly out into the pan. It might resist you a bit because it’ll still be thick, but do your best. Don’t worry if it looks a little thin in places … it’ll rise as it bakes.
- Bake at 350 F for 25 – 30 minutes. Let cool for at least 10 minutes, then cut and enjoy!
