Description
Flavorful garlic red wine sauteed mushrooms are both inside and atop these juicy double mushroom burgers. With melty swiss cheese and caramelized onions and a bit of tangy sweet barbeque sauce, these burgers are a little taste of heaven for any mushroom lover!
Ingredients
For the garlic red wine sauteed mushrooms:
- 1/2 Tablespoon butter or olive oil
- 8 oz. fresh mushrooms, sliced
- 4 cloves garlic, peeled & chopped
- 2 Tablespoons red wine
- 1 Tablespoon soy sauce
- A sprig of fresh thyme leaves (or a sprinkle of dried thyme)
- A small sprig of fresh rosemary or several basil leaves, finely chopped
- Salt & freshly ground pepper, to taste
For the onions and burgers:
- 1/2 Tablespoon butter or olive oil
- 1 large sweet onion, peeled & sliced thin
- 4 – 8 oz. ground beef
- Salt & freshly ground pepper
For serving:
- Slices of swiss cheese (or Dubliner Irish cheese)
- Toasted brioche buns (I used this recipe)
- Sweet tangy barbecue sauce (or condiments of your choice)
- Baby arugula, mixed greens or other lettuce
Instructions
- In a medium frying pan over medium heat, melt 1/2 Tablespoon butter, then add the garlic and stir briefly until fragrant. Add the mushrooms, wine, soy sauce, herbs and sprinkle with salt & freshly ground pepper. Stir, then cover and cook for several minutes, uncovering to stir and check the mushrooms. When they are soft and tender, give them a taste and add salt & pepper (or other herbs) as desired.
- Remove the onions from the pan and add another 1/2 Tablespoon butter. Add the onion and saute until starting to brown and caramelize, stirring frequently. Remove the onions from the pan. Some butter might remain. If not, add a bit more butter to the pan for frying the burgers.
- Put half the mushrooms and about 1/3 of the sauteed onions in a mini chopper and process until finely chopped (or chop by hand). In a medium mixing bowl, mix the mushrooms and onions with the ground beef. Form into 2 – 4 patties and sprinkle each patty on both sides with salt & pepper.
- Cook the burgers in the same pan (to soak up the good flavors) over medium heat until they are browned on both sides and almost done to your liking. Cover each patty with cheese, then cover the pan until the cheese is melted. Toast the buns.
- Set each burger on a toasted bun, top with the remaining sauteed mushrooms, sauteed onions and greens of choice. Drizzle with sweet, tangy barbeque sauce (or condiments of choice). Enjoy!
