This maple peanut butter dip makes eating apples SO much more fun! It’s creamy and chock full of good peanut butter flavor with a light sweet hint of maple and vanilla. Plus it delivers a healthy dose of fiber (4 – 7g) and protein (over 11g) without a lot of calories. AND you can make it in about 5 minutes. I make this lovely dip just for myself. In fact, I usually make a half batch, for portion control. But I’m absolutely certain there’s no peanut-butter-loving kid out there who wouldn’t love this dip. (Or adult for that matter!) Although you might need to double or triple the recipe to have enough for kids to snack!
The other day, I decided I wanted a dip to go with the beautiful honeycrisp apples that my dad grew. I’m not much of a raw apple eater, but I know they are so good for you. So I wanted to find a way I would really LOVE eating apples. Because dad’s apples are just too gorgeous to let them go to waste. But I also wanted extra fiber, too. I’m really trying to get enough fiber in my diet every single day. Partly for my aging digestive system that doesn’t work as smoothly as it used to. But also for my heart health and my cholesterol level.
What’s the secret to this healthy high fiber maple peanut butter dip?
The secret to this recipe is peanut butter powder, which is simply peanuts minus all the fat. Because it’s low in fat, the fiber and protein are more concentrated so it’s super healthy. I buy big jars of PBFit at Costco. But I’ve also bought PB2 in the past. I use peanut butter powder all the time in my smoothies and baked goods. And my energy bites. Since my son is trying to lose weight, he has started using peanut butter powder in his smoothies too. For peanut butter lovers who want to eat healthier, you can’t go wrong with peanut butter powder.
So I went in the kitchen and whipped this up in about 5 minutes, stirring together some ingredients I just KNEW would go well together. I returned to my desk with a big plate of crunchy apple slices and a little bowl of dip. Apple slices on their own are pretty good. Apple slices with THIS dip are amazing, if you ask me. Ingredients
- 1 oz. light cream cheese at room temperature
- 1/4 cup peanut butter powder (such as PB2 or PBFit)
- 1/2 teaspoon maple syrup
- 1/4 teaspoon vanilla
- 2 – 3 Tablespoons apple cider or apple juice
- Optional: 1 scoop unflavored fiber powder (such as Benefiber)
Instructions
Stir together all ingredients until fully mixed. For extra fluff, use a hand mixer. Add more apple cider as needed if the dip is too thick. Serve with sliced apples and enjoy!
