Flaky tender salmon crusted with parmesan cheese and crunchy chopped pistachios, topped with a beautiful pomegranate avocado salsa. The mixture of textures and flavors of this dish dance on your tongue! Moist, tender salmon, crunchy pistachios, creaminess from the parmesan and avocado, with bursts of tart/sweet juice from the pomegranate seeds, and a zing of onion and lime. If you like, you can add yet another flavor dimension by throwing a little jalapeno in the salsa for a little spicy tingle too.
When the holidays get busy, I turn to quick, simple recipes like this for dinner. It’s beautiful, it’s festive, it both looks and tastes special. But it’s so so easy to put together with not many ingredients.
As you might be able to tell from the photos, I had a hard time waiting to dig into this. But I decided that showing that pretty flaky pink salmon was even better than showing an untouched piece of fish.

Ingredients
- 2 fresh salmon fillets (about 3 oz. each)
- 1/4 – 1/3 cup finely shredded parmesan cheese
- 1 oz. roasted salted pistachios, chopped
- 1/4 – 1/2 teaspoon granulated garlic
- 1/4 – 1/2 teaspoon onion powder
- 1/2 teaspoon Old Bay Seasoning
For the pomegranate avocado salsa:
- 1 ripe avocado
- 1/4 cup pomegranate seeds
- 2 Tablespoons finely chopped red onion
- 1 Tablespoon freshly squeezed lime juice
- A sprinkle of salt (to taste)
- Optional: 1 teaspoon chopped jalapeno (or to taste)
Instructions
- Preheat the air fryer (or oven) to 400 F. Sprinkle the salmon with salt & freshly ground pepper. Set the salmon in the air fryer leaving space around each piece or on a silicon-lined baking sheet in the oven. Let cook partially (about 3 minutes in the air fryer or 5 minutes in the oven).
- Meanwhile, mix together the parmesan, pistachios and seasonings. Coat the tops of both partially cooked salmon fillets with the nutty mixture. Set back in the air fryer/oven to finish cooking. Total cooking time will vary depending on the thickness of the salmon, but should be between 7 – 12 minutes in the air fryer or 10 – 20 minutes in the oven. Watch it carefully and remove as soon as the salmon flakes easily with a fork in the thicker portion of the fillet.
- While the salmon is cooking, toss together the salsa ingredients in a small bowl. Serve the salmon warm with salsa over top.
