When I’m craving mushrooms, I like to buy myself a great big package of fresh mushrooms from Costco. But then I struggle to use them all before they go bad in my veggie drawer. That’s when a meal like this comes in soooo handy. Not only is it delicious and quick, it uses up lots of mushrooms! And it’s packed full of flavor, quite filling and loaded with nutrients. Oh, also, it’s low in calories. How can you go wrong with that?
Are mushrooms good for you?
I often sing the praises of mushrooms because of their amazing umami flavor. They have a delightful meaty flavor and make a great substitute for meat. But mushrooms are also super healthy and a great way to lose weight. Mushrooms are very low in calories and loaded with important vitamins and nutrients like:
- Vitamin D – so important for your bones, immune system
- Fiber – great for digestive health and for your heart
- Protein – keeps your muscles strong
- Antioxidants – helps reduce signs of aging, boosts brain power and lightens your mood
- Minerals like selenium, copper, magnesium and potassium – lowers blood pressure
And if you’re looking to lower your cholesterol, mushrooms can help!
Not all mushrooms are healthy, though. Some wild mushrooms are toxic and deadly. Unless you know how to identify wild mushrooms that are edible, it’s best to stick to eating mushrooms from the store.

Ingredients
- 1/2 – 1 Tablespoon extra virgin olive oil (or oil from the sun-dried tomatoes)
- 2 cloves garlic, peeled & chopped
- 1/4 of an onion, chopped
- 4 – 5 oz. fresh baby bella mushrooms, sliced
- 1 small sprig of fresh rosemary, chopped fine
- 3 – 4 sun dried tomatoes in oil (Italian seasoned), drained & chopped
- 5 – 7 sweet cherry tomatoes, chopped (or 1 campari tomato, chopped)
- 3 – 4 Tablespoons red wine
- About 1 cup chopped kale leaves or baby spinach
- Red Robin Seasoning (or your favorite seasoned salt) and Trader Joe’s 21 Seasoning Salute (or your favorite no-salt seasoning)
- Freshly ground pepper
Instructions
- Heat a medium frying pan over medium heat. Add the oil to the skillet, then the garlic and onions and saute until the onion is soft and translucent.
- Stir in the sliced mushrooms, rosemary, sun dried tomatoes and cherry tomatoes. Cover and cook until the mushrooms are tender, stirring a few times. Stir in the wine and cook until the liquid is evaporated.
- Stir in the kale or spinach, then season to taste with the seasonings and fresh ground pepper. Serve over cauliflower polenta (recipe here), brown rice, mashed potatoes, cauliflower or turnips or toss with pasta. Sprinkled with shredded parmesan (or vegan parmesan) if you like. Enjoy!

The ingredients has red wine listed but the recipe directions don’t include the wine. Does the red wine get added and if so, at what point is it added?
