For the pizza crust:
- 3/4 cup uncooked quinoa, soaked in water for 8 hours
- 1/4 cup aquafaba (juice from cooking beans … or water)
- 1/2 teaspoon baking powder
- 1 clove garlic, peeled
- 1/2 teaspoon Italian Seasoning
- 1/2 teaspoon salt
- 1 Tablespoon olive oil
Toppings:
- 1/2 – 2/3 cup marinara or pizza sauce
- About 1 cup shredded mozzarella cheese
- Other toppings as desired
Instructions
- Put the quinoa in a bowl or jar and cover with water so there’s at least 1 inch of water over the quinoa. Let the quinoa soak in the water for 8 hours.
- Preheat the oven to 425 F. Strain the remaining water from the quinoa and rinse.
- Put the quinoa and the rest of the crust ingredients in a small blender cup and blend until smooth.
- Line a 12-inch pizza pan or baking sheet with parchment paper, then spray with avocado oil. Pour the “batter” out onto the parchment paper and use a spatula to smooth it out until it covers the bottom of the pan or is 1/4 inch thick.
- Bake at 425 for 20 minutes, then flip and bake for 10 – 15 more minutes, until browned.
- Remove from oven and cover with sauce, cheese and any other toppings you like. Bake until the cheese is melted and bubbly, then remove from oven, slice and enjoy!
