Sometimes simplicity is the best. This simple cucumber salad with salty marinated feta cheese, seasonings, a little zing from Japanese Yum Yum sauce and a tangy squeeze of lemon tastes fabulous. It’s such a nice easy meal for a hot summer day.
This gorgeous salad comes together in minutes. It is the easiest cucumber shrimp salad I think I’ve ever made. I had just returned from working out and I was starving! I had loads of cucumbers, marinated feta, an avocado and yum yum sauce in my fridge. I knew I had some good shrimp in my freezer that I had bought at Costco. I pulled out my spiralizer (because it had been a while since I’ve played with my spiralizer) and I made me a fabulous salad in no time. Which is a good thing because I was kind of having a food emergency. After a few photos, I inhaled the salad.
No frills, no fuss. Just a quick, easy salad. I was actually kind of surprised at how good it tasted. There’s something about shrimp and cucumber together. They just fit. Especially with avocado and feta … and lemon! You gotta have lemon. The sprinkle of seasonings and fresh ground pepper make all the difference. Don’t skip them!
If you don’t want the spicy kick of the yum yum sauce, try drizzling with a little of the olive oil from the marinated feta instead or use another dressing of your choice or Greek tzatziki sauce. You really don’t need much dressing if the cucumber is fresh and the shrimp is good quality.

Ingredients
- Per serving:
- 1/2 of a large English cucumber or 2 mini “cute” cumbers
- A few thin red onion slices
- About 10 – 12 pre-cooked frozen shrimp, tail off, thawed
- 1/4 – 1/2 of a ripe avocado, cut in small chunks
- Old Bay Seasoning
- Red Robin Seasoning (recipe here – or use your favorite seasoned salt)
- Freshly ground pepper
- A couple wedges of marinated feta cheese (recipe here – or use regular feta)
- Japanese Yum Yum Sauce (recipe here – or use store bought)
- 1 – 2 wedges of lemon
- Fresh herbs for garnish
Instructions
- Using a spiralizer, cut the cucumber into curly spirals, or simply cut the cucumber into slices with a knife. Set the cucumber in your salad plate or bowl and toss with the onion and shrimp. Sprinkle with Old Bay and Red Robin Seasoning and freshly ground pepper.
- Crumble the marinated feta over top. Drizzle with a little yum yum sauce. Serve with lemon wedges to squeeze over the salad and garnish with fresh herbs if desired.
