Elegant and Easy Brie Stuffed Roasted Pears

These easy brie stuffed pears topped with red wine pineapple cranberry sauce and toasted walnuts are a delightful, elegant and super simple starter or dessert. You seriously won’t believe how good this tastes! Sweet, juicy, tender pears are the perfect counterpoint to creamy melted brie cheese. I find the tart pineapple red wine cranberry sauce adds a marvelous contrast. And then the toasted walnuts come along and add satisfying crunch. I was smitten at first bite.

I’d bought the brie at Christmas-time because I was thinking of a baked brie topped with cranberry sauce and walnuts, but I didn’t. There was no time. I came home from the holidays with most of a jar of cranberry sauce. And yes, the brie, still unopened. And since my sister had brought a big bunch of pears, I snagged some pears too, because I just love pears.

Why Roasted Pears?


Roasting just about any fruit or vegetable deepens the flavor. You’re left with a warm, cozy, more intense version of the fresh produce. However, something truly magical happens to pears when you roast them. I find poached pears similarly spectacular. But I love roasted pears because they are even easier and just as impressive.

Rather than falling apart, roasted pears hold their shape. They become tender and the lovely pear flavor really shines in each juicy, wonderful bite. Fresh pears are marvelous in their own right. But a roasted pear: now that’s a marvel to behold and treasure!

Are Pears Good for You?

Yes! Pears are low in calories (just 100 calories) and bursting with health benefits, providing a great source of:

  • fiber – The fiber in pears promotes digestive health, heart health and weight loss. In fact, one pear has 6 grams of fiber, 22% of your daily fiber needs.
  • lutein and zeaxanthin – these important nutrients help keep your vision sharp, especially as you age.
  • vitamin A and C – These important antioxidants, along with the minerals in pears, help your body ward off illnesses like flu, colds, upset stomach and more.
  • potassium and copper – Potassium acts as a vasodilator (an extremely good one) that helps in lowering blood pressure. 
  • vitamin K, calcium and magnesium – Helps prevent and treat osteoporosis and bone mineral loss.

All of these things add up to so much! Pears are beneficial for heart health, inflammation, reducing cholesterol, increasing blood flow, preventing cancer, gut health, diabetes and more. Aside from the delicious taste, there are so many good reasons you really must include pears in your diet.

Variations on these Roasted Pears

If you want to switch it up a bit or just make this simple delight even more swoon-worthy, try one of these ideas:

  • Use raspberry sauce in place of the cranberry sauce
  • Brush the cut side of the pears with a bit of butter before roasting
  • Up the sweetness by sprinkling with cinnamon sugar, or brushing with maple syrup or honey
  • Alternatively, drizzle with honey or maple syrup after roasting
  • In place of the toasted walnuts, try candied walnuts or cinnamon roasted almonds

Brie Stuffed Roasted Pears with Pineapple Cranberry Sauce and Toasted Walnuts

Ingredients

Scale
  • 1 large pear
  • 1/21 oz. brie cheese, cut into small chunks
  • A pinch of cinnamon
  • Pineapple Red Wine Cranberry Sauce (recipe here)
  • 1 oz. chopped, toasted walnuts

Instructions

  1. Preheat the oven to 350 F. Line a small baking sheet with silicon baking mat.
  2. Slice the pears lengthwise and use a melon baller or spoon to remove the core. 
  3. Sprinkle the pears lightly with cinnamon and set cut-side up on a baking sheet. If you like, you can brush lightly with maple syrup, honey or butter.
  4. Bake the pear at 350 F. for about 10 minutes or until tender. Remove from oven and stuff the holes with chunks of brie cheese. Return to the oven for a few minutes until the cheese is nicely melted.
  5. Move the pear halves to serving plates, top with the sauce and sprinkle with walnuts. Enjoy!
