Everything Bagel Triscuit Tuna Melts

Let me introduce you to my newest late summer obsession. Since the fresh garden tomatoes started rolling in, I can’t even begin to tell you how many times I’ve made these for lunch/dinner/late-night/heck-why-not-for-breakfast snacks (er, meals?) … and every single time I taste them, I’m newly bedazzled. The nice crispy crunch of the Triscuit, the creamy goodness of the tuna salad, the umami of the melty cheese, all topped with a sweet juicy tomato slice and a sprinkle of everything bagel seasoning, these little bites totally stole the show of all my fresh-garden dishes this harvest season.


Every bite is pure pleasure. Creamy, crunchy, sweet and juicy, salty, flavorful … I find myself again and again wondering: just oh my gosh how can something this simple be so amazingly good?

To be fair, most of the orgasmic goodness stems from the juicy fresh-garden tomatoes. It’s really hard to beat the flavor of a fresh, ripe, juicy garden tomato. I know people that eat them over the sink plain or just on a piece of toast with a simple schmear of mayo.

But I have to say, I think I’ve definitely elevated the simple tomato sandwich … these simple little bites are total eye candy, plus oh yes, good flavors but I think where they really excel is the textures, because where in a tomato sandwich do you get that satisfying CRUNCH? plus creamy and juicy? To say I’ve fallen in love with them is a total understatement. It’s become a bit like Groundhog’s Day, on endless repeat, except I never want it to end! I want to treasure every … last … single … sweet … juicy .. tomato on a triscuit with tuna, melty cheese and everything bagel seasoning.

Realistically I know it’s coming to an end soon and I want to treasure every moment until the end. And then I’ll probably be sad. I can already sense it coming. But life is change. Fresh tomatoes will come again. There are autumn joys awaiting us.

These are the words I’m whispering to myself as I begin to say goodbye to my favorite food obsession of the summer. Who knows how much longer I will have fresh garden tomatoes? They could be gone tomorrow … or it might be a month or longer before I have to say goodbye. Till then, I shall cherish my pretty little bites. And all things BOTH summer and autumn. Because life is meant to be savored, and savor it I shall!

Everything Bagel Triscuit Tuna Melts

Ingredients

  • Triscuits (or other woven wheat cracker)
  • Tuna salad (however you like to make it … we mix albacore tuna with light mayo and mustard, but use whatever tuna mix makes you happy)
  • Slices of KerryGold Dubliner or other good melty cheese (swiss and cheddar are popular choices)
  • Slices of fresh, ripe, juicy garden tomato (or campari tomato – or cherry tomatoes, halved, cut side up)
  • Everything bagel seasoning

Instructions

Oven/toaster oven directions:

  1. Preheat oven (or toaster oven) to 400 F. Line a baking sheet (or toaster-oven sized baking sheet) with silicon baking mat or spray with cooking spray.
  2. Spread a nice layer of tuna salad on each cracker, then top with a cracker-sized slice of cheese. Set on the prepared baking mat. Repeat, setting the crackers side by side on the prepared baking sheet.
  3. Bake at 400 F. for 8 – 10 minutes or until the cheese is melted. 
  4. Remove from oven, top each Triscuit with a slice of tomato (or half-slice, depending on the size of your tomato), then sprinkle with the Everything Bagel Seasoning.  Enjoy!

Microwave instructions:

  1. Prepare the triscuits with tuna and cheese as above, then set on a microwave safe plate. Microwave on 50% power for 30 seconds to 1 minute for 4 – 6 triscuits, watching carefully to see as soon as the cheese is melted. 
  2. Remove from oven, top each Triscuit with a slice of tomato (or half-slice, depending on the size of your tomato), then sprinkle with the Everything Bagel Seasoning.  Enjoy!
