Ingredients
Scale
- 3 Tablespoons butter, melted
Dry ingredients:
- 1 cup all purpose flour
- 1/2 cup white whole wheat flour
- 1 Tablespoon sugar
- 3 2/3 teaspoons baking powder
- 1 teaspoon salt
Wet ingredients:
- 2 teaspoons vanilla
- 1 egg
- 1 1/4 cup milk (plus a little extra)
Mixins: mini chocolate chips
Instructions
- Melt the butter and set aside.
- In a small mixing bowl, mix together the dry ingredients, then add the wet ingredients and stir to mix well. Stir in the melted butter, a little at a time, until the lumps are pretty much gone. Add just a little bit of milk if the batter is too thick and stir. Stir in mini chocolate chips to taste.
- Heat a nonstick frying pan over medium heat, then reduce heat (if needed) to medium low. Rub a bit of butter over the bottom of the pan, then pour batter in spoonfuls into the pan to make your desired size of pancakes. Let brown on bottom, then flip and brown on the other side. Serve hot.
