French Raspberry Custard for Two

A simple, rustic, soft and lovely French raspberry custard (aka, clafoutis) just for two, naturally sweetened, and so easy to make. It’s the perfect dessert to make for Mom on Mother’s Day or for a special “date night” at home. AND it’s low in calories, too, so you can enjoy without worry.

What is Clafoutis?

Clafoutis (pronounced kla-fou-TEE) is a French dessert comes from the verb clafir, meaning “to fill.” This French custard from Limousin, a region in Southern France, is “traditionally made with cherries. A clafoutis is basically a batter that is poured over fruit in a buttered baking dish and baked.  It is usually served warm and dusted with powdered sugar.  Purists assert that the cherries should be unpitted; arguing that the stones enhance the dish’s flavor.” When exactly the clafoutis was invented is uncertain, but it gained in popularity in the 19th century. Technically, clafoutis made with anything other than cherries is technically not a clafoutis.  It is then called a flaugnarde. Purists have also apparently argued that clafoutis is not “flan”, so I wonder what they would think of me calling it a custard? To me it seems much more like a custard than a “cake”. It’s soft and egg-y, almost like a flan but not quite.

And it’s quite delicious, no matter what fruit you choose to use. Cherries are wonderful in clafoutis (although, to be honest, I would pit them first. Who wants to bite down on a cherry pit while eating your dessert?)

Raspberries are also lovely, soft and tart and they lend themselves perfectly to this French clafoutis, er, flaugnarde. Whatever you want to call it. I hope the French purists aren’t offended!

French Raspberry Custard (Clafouti) for Two

I made this simple dessert one day on a whim after making my daughter French toast. There was some of the egg mixture left and, not wanting to waste it, I added a little bit of maple syrup and almond flour and poured it over some raspberries in a little ramekin and baked it. It tasted heavenly! I had to make it again, so I could properly measure things out and share it with you.

French Raspberry Custard (Clafoutis) for Two

Ingredients

Scale
  • 1 large egg
  • 1/4 cup milk
  • 1/2 teaspoon vanilla extract
  • 1 1/2 Tablespoons maple syrup or honey
  • 1 Tablespoon almond flour
  • A pinch of cinnamon
  • A pinch of nutmeg
  • A pinch of salt 
  • About 3/4 cup fresh raspberries

Instructions

  1. Preheat the oven to 350 F. Grease two 3-inch ramekins (or spray with cooking spray).
  2. In a small bowl, whisk together the egg, milk and vanilla until the egg is fully incorporated. Add the maple syrup and almond flour, cinnamon and salt. Whisk a bit more.
  3. Fill each ramekin about 2/3 of the way with raspberries. Divide the milk mixture amongst the two ramekins.
  4. Bake at 350 F. for about 35 minutes or until the custard springs back to the touch. Let cool until warm and enjoy!

Notes

Clafoutis will shrink slightly as they cool, but that’s okay. These classic French custards are also good cold.

I haven’t had that happen to me, but I did a little googling and apparently it’s nothing to worry about. How did the clafoutis turn out after you baked it?
