Ginger Apple Pear Crisp Baked Oatmeal

Ingredients

  • 35 cups diced apples & pears, skin may be left on (I peeled mine)
  • 2 cups old-fashioned oats
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/3 cup maple syrup or honey
  • 2 cups milk (any kind will do)
  • 1 large egg
  • 1 tablespoon pure vanilla extract
  • 1 teaspoon freshly grated ginger root
  • 2 tablespoons melted butter or coconut oil
  • 2 Tablespoons raw (turbinado) sugar
  • 1/4 cup chopped walnuts or pecans

Instructions

  1. Preheat the oven to 375 F. Spray a 13x9x2 inch pan with cooking spray (or butter it).
  2. Prep the apples and pears and spread half the fruit in the bottom of the pan.
  3. In a medium mixing bowl, mix the oats, baking powder, spices, and salt. Sprinkle the oat mixture over the fruit.
  4. Now take the bowl and whisk together the maple syrup or honey, milk, egg, vanilla and ginger until everything is well mixed. While whisking, pour the butter in a thin stream into the mixture (this will keep it from congealing).
  5. Sprinkle the top with raw sugar and nuts and bake for about 40 minutes or until the oatmeal is set.
  6. Eat warm & fresh from the oven, or cover and refrigerate for later.

Notes

I used 4 small apples and 4 pears which I think was about 5 cups of fruit.
