How to Make Chorizo from Breakfast Sausage

Ingredients

Scale
  • 1/2 lb. lean (or vegan) loose uncooked breakfast sausage (not in casings)
  • 24 cloves garlic, peeled & chopped
  • 2 teaspoons smoked paprika (or regular paprika … or 1 teaspoon of each)
  • 1 teaspoon chipotle powder (or ancho chile powder or cayenne, adjust up or down to taste)
  • 1 teaspoon dried oregano
  • 1/4 teaspoon cumin
  • 1/4 teaspoon ground coriander
  • A pinch of each: cinnamon and cloves

Instructions

  1. Put the raw sausage in a small mixing bowl and sprinkle with the garlic and seasonings. 
  2. Mix with your hands until the seasonings are fully incorporated.
  3. Form into patties or cook loose, as needed. 

Notes

This sausage freezes well! Form into 1/4 lb. logs and wrap each one tightly with freezer paper. Or put them in a bag and remove as much air as possible before storing in your freezer.
